Help Us Adopt - Part 2

“My husband put a poll on Facebook to see how long it would take me to cry.”

That’s how my speech at the Helpusadopt.org Nieman Marcus fundraiser started.  

“I don’t think even he expected it would be before I got us to speak.”

True, I was crying before CEO Becky Fawcett even said my name.  In the few minutes before my part of the program Becky explained helpusadopt.org and its success at helping people adopt by easing the financial burden, and in turn, placing children in loving homes.   It’s a process that costs on average thirty thousand dollars or more.

That’s not what started the early water works.  It wasn’t even when she asked the question “who will love these children if no one can afford it? Who will buy them new shoes, hold them when they hurt and teach them they have worth?”  It was when I looked around at the room of two hundred men and women and saw so many familiar QVC guests and hosts and strangers silently holding back tears.

My role in the night was emcee.  I not only had to tell me story but I had to sit up in front with Becky and narrate the spring fashion show.  It was an honor to be asked; since adoption is so close to my heart.  So in theory it was easy to be there and tell my story and talk about clothes which I do every day on national TV.  Well not that easy.  I had to actually get through telling my story without breaking down completely.   Here is how the rest of my speech went…..

“People always ask me how I could have left San Diego, Ca to move back to the suburbs of Philadelphia.  In fact, you have probably thought the same thing.  I did live in paradise.  Despite the fact that QVC is a dream job, it’s hard to leave the beach and family.  I truly believe it was so I could be right where I am now.  The Lord put me here, so that I could not only help raise funds for helpusadopt.org but so that I could tell my story and ease the pain of other women who have suffered through miscarriage, infertility and difficult adoptions.  The Lord knew I needed to be in the right company.  QVC believes in women’s real relationships and I don’t think there is a more real relationship than one between a mother and her child.  QVC has allowed me, and in fact encouraged me, to tell my story and be a part of creating that relationship. 

My story in not pretty. It’s a happy ending but it was ugly and hard and painful.”

“My husband and I tried to get pregnant in our mid twenties.  And it didn’t really work.  I am still amazed that I can walk into a room like this and look around and most of you can just have sex and make babies.  We really couldn’t do that.  We did get pregnant once and had a miscarriage.  After that it was years of infertility treatments, failed attempts, doctors, and tens of thousands of dollars.  It was the darkest period of my life.  I lost three years. I lived under an evil cloud and cried more than I smiled.  It nearly broke me.

We always considered adoption and were very open to it but we knew it would come with its own emotional component and huge bill.  We signed up with a “less expensive” agency and hoped to save some money. In the end it cost nearly 40 thousand dollars. We couldn’t have afforded it without help.

I remember getting a very big check and a note from my mother in law that said “there will be a baby this year.””

*now sobbing ugly cries.

“We couldn’t have done it without help.  That check helped make me a mom.  It saved my life.  It brought me out of the dark.  But it didn’t just save my husband and me. It saved our daughter and her birth mom as well.  This is just my opinion, this is how I feel; our birth mom wanted another option. She tried to abort our baby twice and that last time someone talked to her about adoption.  Our 40 thousand dollars bought her another option and it bought my daughter a life.  To me, that is money well spent. I would do it again in a second.

But people like me around the country don’t have a mother in law that can write a check. That’s where helpusadopt.org comes in. They are the only Non profit organization in the country that gives grants, up to 15 thousand dollars, to help adoptive parents regardless of sex, age, religion, race…they don’t even charge an application fee. This is an organization that saves children and saves dads and saves moms like me, and I can’t think of a better reason for being in the suburbs of Philadelphia. If I can pay it forward just a little, and help create families I am right where I am supposed to be.”

I made it through the speech, barely.  I cried some really ugly tears but I also had a dozen teary women come up to me after and tell me how my story touched them.  I saw one well know show guest that you may see on TV often, crying her eyes out while I was up there.  I got through it because in the end I helped raise more than 40 thousand dollars for adoption that night.  And I hope that is just the beginning.  I was also supported by QVC.  They donated money to the organization and our CEO even came to the event with his family (nothing like talking about sex and crying your eyes out in front of your boss.)

Maybe the biggest support for me of all was my two friends and sisters in adoption Rachel Boesing and Mary Beth Roe being in the audience.  You probably know of my close friendship with Rachel, who is adopted, but I also have a strong bond with Mary Beth. Mary Beth is a mother I look up to. She is the woman who taught me everything I know about working at QVC.  She brought me in and trained me more than a year and a half ago and since then she has been a dear friend and encouragement to me daily.  Looking at her in the audience and getting a smile and a look that said “I did good,” was all I needed that night.  I am so grateful to both my girls.

And I am thankful to so many of you who went on my Facebook page and encouraged me and told me your stories. I hope my story can help other women know they are not alone, and bring more families together through adoption.

I didn’t know there was a name for it at the time, but in the early 90s, I worked with a “stylist”. Someone whose job it was to choose the clothes I would wear -- “put me together” so-to-speak, to make me look my best.

I had been selected for a make-over for a local television show, and that meant, make-up, a new hair-do, and an outfit selected for me by a “style professional”. I remember enjoying the process tremendously. The clothes were fancier and of better quality than I was used to wearing. It was the era of the “power suit”, and if the power suit was red... watch out!

By the way, I used that picture of me in the red power suit when I went for my audition for this job in 1995. The power of a woman in red -- watch out!

What sparked my memory about that make-over is our Today’s Special Value guest coming up this Monday, the incredible, Lori Goldstein. 4 Different Ways to Style the TSV!

Cheese month continues on ITKWD and we're off to Italy this Sunday! And, who better to tutor us Italian cheese than our friends from QVC Italy!
 
 
Our recipe this Sunday is a Ricotta & Mascarpone Cheesecake. Doesn't this look terrific!?

Ricotta & Mascarpone Cheesecake
 
This recipe is prepared with the KitchenAid 10-Speed Tilt-Head Stand Mixer (K37868).

Ingredients:
 
Crust:
8 oz bag Amaretti cookies
3 Tbsp unsalted butter, melted
 
Filling:
1 lb ricotta cheese, room temperature
1 lb mascarpone cheese, room temperature
1-1/3 cups sugar
2-1/2 tsp fresh lemon juice
1-1/2 tsp vanilla extract
5 large eggs
 
Directions:
 
To prepare the crust, preheat the oven to 350°F.
 
Place the Amaretti cookies in a food processor and pulse until finely ground.
Transfer the crumbs to a bowl, add the melted butter, and mix until combined.
Spread the crust into the prepared pan and evenly press them into the bottom and halfway up the sides. Bake for 8 minutes; set aside.
 
When the pan has completely cooled, place it on the middle of two large pieces of aluminum foil (laid out in a cross shape) and fold up the sides around it, until it reaches the top. Tightly shape the foil around the pan.
 
To prepare the filling, preheat the oven to 325°F.
 
Blend the ricotta in a food processor until smooth. Spoon the cheese into the bowl of a stand mixer fitted with a paddle attachment. Add the mascarpone cheese and mix until combined. Add the sugar, lemon juice, and vanilla. Mix until combined, then pause to scrape down the sides of the bowl. Add in and the eggs and mix just until blended.
 
Pour the mixture onto the crust. Place the cheesecake into a large roasting pan. Fill the roasting pan with enough hot water to cover the cheesecake pan halfway. (The foil will prevent the water from leaking into the cake.) Bake until the center of the cake moves slightly when the pan is gently shaken, about 90 minutes. Transfer the cake to a rack and cool for 45 minutes. Refrigerate until cold, at least 8 hours or overnight.
 
I wasn't sure it was possible to make this cake any better, until our talented chef Andrea suggested we try a lemon curd just to add some extra flavor. If you're a lemon fan, you must try it. Just whisk together the zest of 2 lemons, 1/2 cup + 2 Tbsp lemon juice, 3/4 cup sugar, 1/8 tsp salt, and 3 eggs in a 3-quart heavy saucepan. Cook over moderately low heat, whisking frequently, until it thickens, about 5–7 minutes. Remove the pan from the heat, add 4 Tbsp cold butter, and whisk until completely melted. Refrigerate until ready to serve, then drizzle the sauce over slices of the cake.
 
Now, we couldn't "travel" to Italy without asking one of our favorite Italian chefs to be with us. So, the one and only Fabio Viviani will be here with his brand-new cookbook Fabio's Italian Kitchen! Fabio is just a riot…our whole team loves when he’s in town. But his fun, casual, down-to-earth style also translates in his cooking. He takes the intimidation home-cooks like you and I may feel about Italian cooking, out. And his new book is a testament to his style. It contains 150 recipes that are easy and approachable. His  book is already part of my personal collection. Here’s just one entry: his mom's Tiramisu!
 
 

Since we're talking about Italian cooking today, tell me what's your favorite Italian recipe? Does a homemade lasagna make you weak in the knees? Spaghetti and meatballs?Chicken parmesan? I'm craving a big plate of stuffed shells at this very moment. I just may have to give Fabio a call and have him bring those on Sunday, too…

Sandra’s “Pick Me!” The Hottest Eye Shadow Trend

Last month, I went to the Cosmetic Executive Women’s (CEW) annual Product Demonstrations in New York City. Companies, big and small, show off their latest products in hopes of winning a Beauty Insider’s Choice Award. The awards will be announced on May 17th and this year, for the first time, there will be a QVC Beauty Quest Award. The winning product will appear on our CEW awards show in July.   As the QVC beauty buyers and I walked the isles, we were looking for two things: First, we wanted to find that special, winning product that you will love. Second, we were trying to identify larger trends in beauty. 

One of those trends is thicker shadow sticks and pencils. Beauty experts say customers are gravitating toward chubby sticks because they are fast and easy. Most of us don’t want to spend a lot of time getting ready and we want products that don’t require the talent of a makeup artist or even a steady hand to apply. I saw creamy, thick shadow/liner sticks from so many brands, both in the prestige and mass categories. (CEW defines prestige brands as those found at department stores, boutiques, and on QVC. Mass brands are found in big box retailers and food and drug stores.) 

I really liked several of the shadow sticks I tried at the CEW Beauty Awards Product Demonstration, but none “wowed” me like the shadow stick I have already been wearing for the last 18 months, Mally’s Evercolor Shadow Stick. Once again, our friend Mally is ahead of the trend. So, in this case, I went to CEW to discover new products and ended up just loving the products in my makeup drawer even more! 

I adore Mally’s shadow sticks for several reasons. 

1.     SIMPLICITY: They are so simple to use and the effect is gorgeous. All you need to do is swipe the color on your eye and smudge it with your finger. Done! I usually use one color on my lid and then put a slightly darker shade in the crease.  If I’m really in a hurry, I’ll just rub on one color.

2.     LONGWEAR: I put them on once and don’t need to reapply for the rest of the day.

3.     COVERAGE: Mally’s unique technology allows you to build coverage. Depending on how much you swipe, you can go from a soft look to a dramatic eye in seconds. 

Mally’s Evercolor Shadow Stick comes in more than 20 colors. I own most of them (I really love them!) but I tend to wear the same three or four when I need to get out of the door fast. Here’s a picture of my current favorites. The neutral taupes and browns are an easy, go-to. However, for the last two weeks, I’ve been loving the navy.

Vacation Recap & the Launch of Courtney's Beauty Obsession

Well Hello Gorgeous!

I hope you that you have been doing well and this blog finds you in good health!  I am happy to be back from vaca (more on that later) and can’t wait to catch up with you all on PM Style.  This week I'll be debuting my Beauty Obsessions which is something that I've been working on for the last few weeks.  As I explained in my last blog, I grew up in a hair salon with my momma... and I always loved how it was an open forum for everything beauty (and a few therapy sessions as well!).  My mother and her clients always traded beauty secrets and that's exactly what I hope to do with you every week.  This week I'm going to be talking about a secret to great quick and easy hair. It's something that I use when I have very little time (or lots of time as well), that is goof proof, and makes me feel like I just left a salon with a professional having catered to me. Can you guess what it is?  Here's a hint... 

So let's catch up :-).  I just got back from a week of vacation and I have to tell you it was one of the best experiences I have had yet.  I was able to visit three countries and eat a French pastry every single day.  Here are some photos and highlights from my trip:

St. Maarten:  

Beautiful Cove in Simpson Bay.  It was so nice getting to watching all of the planes come in and boats/yachts pass by!

We found a French Pastry Shop right by our condo and we stopped by everyday and got something out of this case.  Needless to say the cereal I have waiting at home will have a hard time living up to this!

When you get to St. Maarten and see all of the Yachts and Sailboats you jokingly as yourself "What am I missing?"  "Why isn't this my main form of transportation?"  One day we saw a helicopter land on the top deck of a yacht and all I could think was "Who is that?!"

St. Barths

We decided during our vaca that we wanted to go spend a day in St. Barths to see all what all of the fuss was about.  I'll tell you right now... Paradise... extreme, beautiful, paradise is found in St. Barths.  Getting there is so scary... your plane descends down (think modified nose diving) down a huge hill that has a very short runway.  After a very short panic attack it was time for Aaron and me to hit the ground running!  First stop in St. Barths was Shell Beach. The shore is literally lined with seashells and some of the most beautiful people you have ever seen. Again, I found myself asking similar questions... "Who are these people?!"   

The last stop on vaca was probably the most remote; Anguilla.  It's 20 miles to the west of St. Maarten and an extremely small island.  The people there are wonderful and are so happy to have you come and visit their remote island.  Shoal Bay is bar none the most beautiful undiscovered beaches I have ever seen.  The coloring of the water is unreal and how few people attend it is incredible.

Can Anyone Guess What I’m Working On??

Hi Everyone!!

I cannot believe St. Patrick’s Day and Easter is all done and dusted for another year! I hope you all had a wonderful Easter! I can tell you it was cold here in Ireland, and so my Easter Egg Hunt was more about tiny frozen hands rather than chocolate! So next year I plan to have rather large eggs!! We did have lots of fun afterwards warming our sleeves beside the Aga drinking hot chocolate!

Now it’s time to settle down and start to plan for next year’s shows!! One morning last week as I drank my cup of tea, my mind turned to summer and I found myself praying for some nice warm sunny weather, as last summer was a complete washout here in Ireland!! My husband and I have a mobile home on the sea front in a place called Clogherhead. Last year, every weekend we packed our bags and headed to the mobile, and, even though it rained most of the time, we still managed to have lots of fun on the beach looking for sea shells and buried treasures! As I child I spent every summer in Clogherhead with my bother and sisters, so you can image all the special memories this place holds for me!!

So...as I was thinking these warm sunny lazy day thoughts, I had a eureka moment for a new jewellery collection, “Find the Hidden Treasure.” Here is a picture of me all wrapped up in my warm scarf working on the first draft! 

I know the warm weather is probably a dream, but I think the collection has some possibilities! What do you think? So far I am really pleased!! Watch out, ladies, this could be something in St. Patrick’s Day 2014!!

What's Your Favorite French Recipe? Cheesy Tarte Flambe?

Hello, foodies…

Or, perhaps I should say, Bonjour! We’re “off” to France this Wednesday night on ITKWD to learn about and celebrate French cheeses like brie and Roquefort. And, our recipe is a Cheesy Tarte Flambé…essentially, a fancy pizza.

Cheesy Tarte Flambé

This recipe is prepared with the Cook's Essentials® Premier 18/10 Stainless Steel Cookware Set (K37586).

Ingredients:

1 (8-oz) store-bought pizza dough
1/3 cup sour cream
2 Tbsp milk
1/4 tsp ground black pepper
1/4 tsp ground nutmeg
8 slices bacon, cut into 1/2" pieces
1 large onion, peeled and julienned
8 oz brie cheese, thinly sliced
2 oz Roquefort cheese, crumbled

Directions:

Position an oven rack in the bottom of the oven and preheat to 400°F. Lightly grease a baking pan or cookie sheet. Set aside.

Press or roll out the dough as thinly as possible to fit your rectangular baking sheet. (It should be about 1/8" thick.) Use extra flour, if necessary, to help this process and allow the dough to rest occasionally between each rolling session. Lay the dough onto the prepared sheet; let it rest 15 minutes.

Bake for 12 minutes until crispy and light golden brown. Set aside.

While the dough is resting and baking, mix together the sour cream, milk, salt, black pepper, and nutmeg in a small bowl. Set aside.

Cook the chopped bacon until crisp in a large skillet set over medium heat. Remove the bacon and allow it to drain on a paper towel-lined plate.

Drain all but 2 tablespoons of bacon fat from the pan. Place the onion into the pan and cook until soft and translucent.

Spread the sour cream mixture onto the par-baked pizza dough. Evenly arrange slices of brie on top. Cover with an even layer of the cooked onions and then sprinkle on the cooked bacon and crumbled Roquefort.

Place the tarte back into the oven and bake until golden brown, crispy, and the cheese is melted, about 13–15 minutes. Serve hot.

Having enough flour on the counter, the dough, and rolling pin is key to preventing the dough from sticking to everything. But too much flour will change the constency. Be careful to use only what you need.

Press down on the dough to remove any air bubbles. Then, use a rolling pin if you wish. Or, try stretching the dough, as shown above. Because the dough is thin in this recipe, you don't have to worry about over-working it. Keep working and working and working. It should take about 15 minutes to make the dough fit your baking sheet. Let the dough rest every few minutes. Bake for 12 minutes.

Mix together the sour cream, milk, salt, black pepper, and nutmeg.

Then, caramelize the bacon and onion. If you only have red onions, they'll do just fine. But, they won't look as pretty as they do raw. Red onions lose most of their color when cooked. So, if presentation is important, stick to white.

Meanwhile, remove your crust from the oven. The edges and top should be a deep golden, but not brown.

Layer on your toppings...the sour cream, brie, onions, bacon, and Roquefort.

Put the tarte back in the oven for 13 minutes; add a minute or two to the cook-time if the cheese isn't melty enough for your liking.

And it's ready! Serve hot.

Hello Gardening Friends,

I hope by now many of you are beginning to receive some of your gorgeous Cottage Farms and Roberta’s plants that you purchased from our shows.  I know I had been anxiously awaiting mine and this amazing spring weather we are having has really got me chomping at the bit to get out in my garden and get dirty!  :D  My Rose of Sharon Hibuscus Trees and my Reblooming Irises from Cottage Farms just arrived and I should be planting them this week!  Yay!!!

On tomorrow’s Carolyn's Garden Party, I am really looking forward to showing you our uber-fragrant Cottage Farms Gardenias and also our Roxanne DePalma Garden hose.  Please join me at 9:00am.

What Is Your Favorite Print For Spring?

Hello everyone! Are you ready for spring? I know I am! I can’t wait to walk outside without a coat on! Last week I visited my nephew and family for Easter and was so happy to meet their new family member…5-month-old Jazmine. She is part lab and part retriever and full of energy! It took a while to get a picture but here goes…

As I mentioned in my first blog, from time to time you will meet other members of the team. This week, I would like to introduce Amanda, a buyer in the merchandising office. Hello everyone! Are you ready for spring? I know I am! I can’t wait to walk outside without a coat on! Last week I visited my nephew and family for Easter and was so happy to meet their new family member…5-month-old Jazmine. She is part lab and part retriever and full of energy! Ha! The reality is that every morning is more like a three-ring circus with the kids lollygagging, the dog barking, and my husband and I racing about the house like the Road Runner trying to get us all together and out the door on time. So, when spring break approached, boy, did we need it! It had been a long time since we had taken a proper vacation and we all need to recharge from time to time.
We headed out to glorious Colorado. Spending an active week in the mountains meant that I wanted to wear even less makeupjust enough to cover up the problem areasand I needed to take extra care of my skin. Luckily, my TEMPTU foundation left my skin feeling smooth and hydrated, plus I was able to easily adjust and build the coverage so very little makeup went a very long way. Simplicity and results, thank you very much.
Even better, my stress levels washed away, we spent time as a family, and I learned some things along the way:

The Perfect Mother of the Bride Dress... Almost...

Hello to all of our LCNY fashionistas.   I hope you had a wonderful Easter holiday.  I have lots of great info about our upcoming show but first a shout out to our petite peeps!  A little leftover holiday humor.  The fact is this Wednesday we have a maxi dress in the show that comes in regular and PETITE sizing... also a pull on ponte knit cropped jean, dare I say these words... yes... PETITE sizing available.

Now if that did not get your attention, my MOB story will, grab your coffee it is long.  I found the dress!  After many hours of shopping, it was purchased.  A long gown, dove sliver, that went perfectly with the bridesmaid dresses and the suits.  My size, no alterations.  Shoes purchased plus a great clutch.  Mother of the groom got hers to coordinate. I tried the dress on for multiple female family members to all high reviews, but the morale to the story is they all saw it on me at night.   Pay attention it gets ugly.  On Easter, my daughter Meghan asked me to bring the dress to my Mom's house and show her because she was the only one not to see it.  I put on my beautiful new dress, shoes and handbag. I did the runway walk into the family room filled with guests.  At first rave reviews, but as I spun around in front of the palladium windows my father exclaimed (thank God for Dads), "you can see everything". The sun coming through the windows made the dress so sheer. OMG! Fortunately I had undergarments on...  Needless to say I was a big hit at the Easter event and the dress was shipped back on Monday. Our maxi skirt on the other hand is lined, our maxi dress is made with the beefy cotton so this, my friend, will never happen to you.  I got you covered... haha... See you Wednesday morning with MBR!

Take Your Skin-Care Regimen to the Next Level with Retinol

If you've tuned into a skin-care show on QVC before, chances are you've heard of an ingredient called retinol. Well, whether or not you've already heard about it, I thought I'd tell you a little bit more about this powerful antiaging (dare I say) "miracle" that'll take your skin-care regimen to the next level.

We offer several different retinol products at QVC, each with different technologies and delivery systems, but I'd like to focus on our three newest launches.

The first and newest to the QVC skin-care family is Algenist Retinol Firming Serum. This powerful treatment combines the power of Algenist's patented alguronic acid (derived from microalgae) technology with retinol. This product utilizes stabilized retinol encapsulated in a microsphere delivery system with a time-released mechanism to help deliver the treatment over time. In a consumer-use study of 100 women, most women who were surveyed noticed an improvement in firmness and lines and wrinkles in just 10 days. Most showed improvements in skin texture and overall radiance in just 28 days. This serum is oil free, hypoallergenic, and non-irritating.

The next item is Kate Somerville RetAsphere Hydrating 2-in-1 Retinol Treatment. This particular product was actually one of the first retinol products I tried. One of the perks of my job is getting to try a lot of these products way before they hit the market. It's a tough job, I know, but I'm more than happy to step up to the plate! Anyway, I immediately fell in love with the texture and fast results generated by this product. Kate developed a Smart Release delivery system, which is an exclusive microencapsulation technology that helps stabilize retinol in its pure form. This product also contains hyaluronic acid and vitamin E to help soothe and moisturize the skin. In a clinical study, 83% of women showed an increase in skin firmness and elasticity in as little as two weeks!

The last product I want to talk about is StriVectin Advanced Retinol Night Treatment. This product combines retinol with StriVectin's proprietary NIA-114 technology. StriVectin actually tested their formulation (with NIA-114) against a control sample that didn't contain NIA-114. They found that their product showed a greater improvement in decreasing the appearance of periocular fine lines and wrinkles than the formula without NIA-114. Pretty impressive! This product will address the appearance of fine lines and deep wrinkles while hydrating the skin and improving overall radiance.

These three products are all designed for nighttime use and, as with all retinols, remember to always use an SPF during the day as they can cause heightened skin sensitivity to the sun.

I'd love to hear about your success stories with retinol products! Here's my challenge for you: before you decide to try one of these products, take your own "before" picture and then take pictures every two weeks. I'm willing to bet you'll be pleasantly surprised by your results! It's important to remember that, as with all skin-care products, you need to be patient and give the products time to work. Just because you can't see a change within a few days doesn't mean the product isn't working. These products are often measured using scientific machines, which can detect changes much better than the naked eye…just give your eyes a few weeks to catch up!
