Chocolate Chip Lava Cookies! Who Brought the Milk?

If you were able to join us yesterday for our FIVE hour Cooking on Q Spring Edition, I’m sure you loved special guest Carla Hall just as much as I did.

If you missed Carla, rest assured: we’re already trying to get her back for a second appearance, so just stay tuned. She’s so passionate about what she does and it shows on her face and in her food. I may or may not have eaten the entire dish of chicken and dumplings when the show was over.

Anyway! I also shared that I’ll be out of the office for a few days doing a little research for In the Kitchen with David. So stay tuned for a special guest blog tomorrow and the lovely Jane Treacy will be in the kitchen with you this Wednesday night. She’s lovely AND lucky, foodies. She gets to sample my Chocolate Chip Lava Cookies!

 

Ingredients:

  • 1 (12-oz) bag semisweet chocolate chips, divided
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 stick unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract

 

Directions:

  1. Preheat the oven to 350°F.
  2. Lightly grease a 12-cup muffin pan with oil spray. Place 2/3 cup of the chocolate chips into a microwave safe bowl and melt the chocolate chips, in 30 second intervals, until completely melted. Set aside.
  3. Combine the flour, salt, baking soda, and baking powder in a small bowl. Set aside.
  4. Cream together the butter and both sugars in the bowl of a stand mixer fitted with a paddle attachment. Add the egg and vanilla and mix until well blended. Add the flour mixture and mix until just combined. Pour the remaining chocolate chips into the bowl and mix until they're evenly distributed.
  5. Place 2 Tbsp of the cookie dough into the bottom of each prepared muffin cup. Press down on the cookie dough to flatten it, creating a small well in the middle. Place 1 Tbsp of the melted chocolate over each flattened dollop of cookie dough. Refrigerate the cups for 3-4 minutes. Scoop 2 more Tbsp of the cookie dough on top of each of the refrigerated cups and press around the edges to seal the melted chocolate in the middle. Bake on the bottom rack of the oven for 23-25 minutes, until golden brown.
  6. Remove the cookies from the oven and run a knife around the edges of each cup to loosen them from the pan. Let cool for 15 minutes, and then carefully remove the cookie cups by inverting the muffin pan onto a cookie sheet. Serve immediately with vanilla ice cream.

This recipe is prepared using the KitchenAid 300-Watt 10-Speed Tilt-Head Stand Mixer (K37868).

I bet you’ve got everything in your pantry to do it—not to mention the milk to wash those warm, melty, gooey cookies down. The second reason they’re so great is because they’re EASY, thanks to the muffin pan. There are lots of underutilized kitchen tools, foodies, and muffin pans are one of them. Thus, for the month of April, our theme on In the Kitchen with Davidis “Do You Know the Muffin Pan?”! We're making every single recipe in a muffin pan and you’re going to love it.

We all clean out our closets right? The question is, what do you do with all of your clothes? For years, that answer for me has been Dress for Success. This organization provides professional attire for women in need (they have been doing so for over 15 years). I knew I wanted to donate the minute I heard about them. As a broadcaster I wore suits most of the time, and Dress for Success was a way that I could help empower other women to achieve their dreams simply by donating my gently used suits. Does a suit make the woman? No, but it’s a strong visual resume that says, “I mean business, and I am a force to be reckoned with.” That feeling of empowerment, capability, and purpose is what I hope the Dress for Success clients feel every time they go in to a job interview. Our charitable mission at QVC is to support the success and wellness of women through the power of relationships. My relationship with Dress for Success is my way of extending a hand. My (cheering section) message to the clients… “get out there sister, here’s a suit (of armor), reach for your dreams, conquer the world, thrive!”

Shout Out to My Friends in Boston!

Shout out to my friends in Boston!!  What a great city!!  James, Lauren, Chelsea and my sister Cathy and I visited Boston this past weekend for the Navy vs. Boston University lacrosse game.   I have only been to Boston once to visit the Clarks offices.  It was a quick trip with no time for sightseeing.  I have only heard wonderful things about the city and the people of Boston and that was enough to make me/us want to make a weekend out of it. 

 

We stayed at XV Beacon, a beautiful boutique hotel, right in the heart of the city.  The game was Saturday afternoon.  It was a little chilly but the rain held off until the last few minutes of the game.

 

This is the Boston Commons, a beautiful park in the middle of the city.  I gave my Ryka’s a workout walking to all of the sites.  We are looking forward to going back for a visit in the summer to really see the Commons in full bloom.

 

The architecture in Boston is amazing.  Row after row of four and five story homes and what seemed like a Church on every block. 

This is the organ in the Christ Episcopal Church.

 

Goorin Bros. is a four generation family owned hat shop that we couldn’t resist stopping in.  Hatitude!!

 

We got Chelsea’s name from a street sign in our neighborhood.  Looks like it is a popular name in Boston too!

 

I took the picture of the ducks in a row in the Commons.  Had to stop by “Cheers” and the trip wouldn’t be complete without a pic of the “Green Monster” at Fenway Park.

What a great weekend!  In case you are wondering, Navy won!!  Thank you Boston, we’ll be back! {#emotions_dlg.biggrin}

Happy April 1st!!

Good afternoon my LCNY fashionistas and Happy April first! The sun is shining, the birds are singing and it feels like spring. The Davies household is a rockin'. 

I would like to first announce that Kevin (my youngest) is a graduating senior from high school, has committed to Temple University.  I am so proud of his choice, his accomplishments and the young man he is turning in to. Trust me, with most boys the road has been a bit bumpy.  Now I need to keep him motivated on the end game, graduation.  He is suffering from a severe case of senioritis. :)

As for my first born son, he moved out and into his first post college apartment this weekend. Larry started his job November first and wanted to be in his new place by spring.  Well done!

I am not going to lie, I cried saying goodbye to him Saturday night after we had moved him in.  Larry's response "Mom I am 20 minutes away.....really tears." 

He won't get it until he is kissing his own child good bye.

By the way, I am over the sadness and feel like I am in one those Staples commercials deciding what to do with his room.  I have already ordered new bedding and lamps....woohoo!  Next on the list is Meghan's wedding.  It is fast approaching and all of a sudden there is so much to do.  The next two months are going to fly by.  I am trying to savor each moment.  I want a lifetime of memories to be stored up so I forget nothing.  You know how you can get so busy you forget to enjoy.  My motto over the next two months is to stop, listen, smell, feel, breathe and enjoy.

Today is April first, a couple of windows are open, the birds are singing, my pot of coffee is on and I am planning the show tomorrow with MBR.  Ahhhhhh, life is good.  See you tomorrow at 9 am my friends ....don't be late....lots of new goodies.

Muffin Pan Spaghetti Nests! What Can You Make with Your Muffin Pan?

Hello, foodies...

I thought I stumped my friend Linda (writer of the popular blog Giggles, Gobbles, and Gulps) when I asked her to send me her best muffin pan creation in honor of our theme on In the Kitchen with David. But, I should have known better. Linda can whip up just about anything and she sent me a delicious idea for adults and kids alike—Muffin Pan Spaghetti Nests!

Muffin Pan Spaghetti Nests

 

If you are like me portion control goes out the door when it comes pasta. Pasta is my weakness and I always find myself eating way more than I should and having complete food guilt afterwards. One of my favorite ways to portion control my spaghetti is to make Muffin Pan Spaghetti Nests. Not only does each nest dish up a nice little serving of spaghetti, the nests are great for young children or a quick grab and go lunch the next day. My boys love the idea of little spaghetti nests for dinner. They get a kick out of having something in the shape of a muffin or cupcake for dinner. 

Two or three spaghetti nests per serving, paired with a nice salad, and you will have a beautifully prepared, fuss-free dinner ready in no time. While this particular recipe is a meatless version, you could top your nest with a small meatball, a slice of pepperoni, black olives or even mozzarella balls.

Ingredients:

  • 4 cups of cooked spaghetti
  • 1/3 cup Parmesan cheese, plus extra for sprinkling
  • 2 eggs
  • 4 tablespoons milk
  • 5 tablespoons Italian seasoned bread crumbs, plus extra for sprinkling
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • Non-stick cooking spray
  • 1 cup of your favorite pasta sauce
  • Olive oil for drizzling
  • Flat parsley for garnish

Directions:

1. Preheat oven to 375 degrees. Beat the Parmesan, milk, salt, garlic powder and egg together in a large bowl until smooth. Pour the sauce over the cooked spaghetti and add breadcrumbs.

2. Spray a muffin pan with non-stick cooking spray. Spoon a teaspoon of pasta sauce into each muffin cup. Pack each muffin cup with the spaghetti mixture. Before placing spaghetti in oven, lightly drizzle the tops of the nests with olive oil and sprinkle tops of spaghetti with bread crumbs and Parmesan cheese. Bake 15 minutes. Then, let cool 10 minutes before removing from the muffin pan. 

3. To serve, spoon a small amount of pasta sauce under each nest. Place the spaghetti nests on the sauce. Garnish with additional pasta sauce and parsley.

Tea Party Special

The generations are at again, this time with the Lenox Stainless Steel Flatware Set.  My Friend, Kristen (20), Isabella (4-1/2) and I (49) each chose a different pattern of the Lenox Tableware and styled it for a formal dinner, an everyday table and a tea party.  Guess who chose what?

Hi, it’s Isabella!  I like this tea party because I like my tea set that I got for my birthday. I picked this polar bear because he’s really fluffy.  He lives where Santa lives; and I like Santa. I picked this bunny because I like him; and he’s my favorite bunny’s brother.  And I love him. That’s it!  (Hi, it’s Nancy.  The pattern she used was Covington.  Doesn’t it make “Gracie” Bear’s birthday/tea party even more special?)

Hi, it’s Kristen!  Nancy has a set of casual dinnerware passed down to her from her Grandma.  I wanted to style these because they suit my personality.  They are bright, cheerful and pink – that’s me!  I chose the Brentwood pattern because it has a simple country feel that reminds me of my hometown (population 973).

I guess you know what I chose.  Formal.  OK, I really didn’t “choose” it.  It was the only choice left.  Ugh. Truth be told, I’m a casual girl all the way!  So, I had to search the internet for tips on how to set a formal dinner table!  I love the Bellevue pattern with my best china and my grandma’s crystal for Easter; but, I can totally see these being perfect for a picnic with paper plates.  It’s sleek and elegant without any of the stuffiness.

My Top 5 Holiday Entertaining Tips

Maybe it’s the promise of sunshine in the air. Maybe it’s the glimpses of green peeking out of the thawing earth. Maybe it’s just the fact that I’ll forever be a kid at heart. But when I think of springtime entertaining, I just want to PLAY!

And the holiday table is my playground {#emotions_dlg.biggrin} Because I’m never just serving up food. I’m sharing love and laughter with the people who mean the most to me. And I want them to look forward to sitting down at my table as a chance to relax, unwind, enjoy…and play! So here are my top 5 tips to keep your Easter and Passover entertaining fun and festive.

Easter Egg

1.  The Name Game– There’s nothing like that special feeling you get when someone makes something just for you. That’s why I always make an extra effort to make place settings super special and personalized.

Growing up, when we dyed Easter eggs, we always personalized them with each guest’s name (simply write it on the hard-boiled egg with a white or yellow crayon before you dye it). Then we made the egg the place “card” at each setting.

These days, I go the extra step and find special ways to feature the eggs in my place settings. Not only is it a great way to welcome your guests, it’s a great excuse to spend some time on Pinterest, looking for ideas!

2.  Keep it Fun– As I’ve said, meals are never just about the food! I always have some ideas for fun mealtime activities in my back pocket. Perfect for those moments where everyone is having a good time and no one wants to leave the table.

Those personalized eggs? They are great for something called the Egg Game (which I learned from my dear grandmother, Maria). That’s where you knock or tap your egg into someone else’s. The goal is to crack their egg while yours stays intact. You’d be surprised how long this game can keep a roomful of guests entertained! Best of all, it’s truly fun for all ages. And my grandmother Maria won a lot!

3.  Flower Power– Especially after a winter like this one, springtime entertaining is the perfect opportunity to incorporate flowers into your tablescape.I always like to find fun and unexpected ways to do that. Like arranging mini bouquets in a trio of mugs down the center of the table (Bonus: The low profile means you can easily converse with all your guests, instead of craning around a tall centerpiece.)

When fresh flowers aren’t available, I’ll place a block of floral foam into a temp-tations baker, then arrange silk flowers in it, accented with a few springtime accents. Best of all, you can lift out the floral foam arrangement when you’re done, and re-use them year after year.

4.  Celebrate traditions, old and new – In my family, my mother always made a braided Easter Bread for the holiday, placing dyed eggs into the loaf before it baked for a festive and delicious finished product. It still earns a place of honor on my holiday table. You have probably even seen me show it on air.

But not all traditions are handed down from generation to generation. Close friends of mine started a new tradition recently of building matzo bread houses (like gingerbread houses) at their Passover table. What started out as a way to keep the kids busy has turned into a tradition everyone enjoys!

5.  Play with your food– We’re always telling kids not to do this, but it’s one lesson I’m glad I never learned! ;) I’m always looking for ways to incorporate playful, edible, beautiful things into my holiday table décor.

Sometimes, I go straight for cute, like these adorable Bunny Race Cars. I got the idea from the Peeps website, and they were a huge hit at my Easter table last year. My god children especially love them!

Fit 4 U Swimdress TSV Preview: Spring forward …finally!

This had to be the longest winter in quite some time. I thought if I saw one more snowflake, I would cry. The good news is spring is here and summer is around the corner….Yippee!!!!  Finally time to pack away the coats, sweaters, scarves and hats and start thinking about your spring/summer wardrobe. It’s swimwear time!

The past few months have been so busy. My team and I are thinking out of the box and creating fresh new ideas and designs in swim. With both my sons away at college, I've had a little more time to devote creatively this year.

My youngest comes home as often as he can to visit. This past weekend he shocked me as I was leaving to go out for dinner. I'd just hung up the phone with him discussing his trip in the AM to drive from school to Florida for Spring break. Of course, I did my Mom thing, “don't forget your sun block, did you pack flip flops, text me the name of the hotel, etc, etc…” I hung up, looked at the time and started to leave for my date.  Then, the door bell rang and I thought, who is stopping by now?  Looking outside I saw a bunch of guys at my door recognizing some of my son’s best buds.  I opened the door to greet them and to my surprise, my son pops out in front of them! There was much screaming and lots of kisses and I still can't believe that he pulled it off. I had the best weekend and can't wait for him to come home for the summer!

So, no surprise, that summer is my favorite time of the year.  My kids and I love our pool. On any given summer morning, we all throw on our swimsuits to start the day. I'm known for changing my swimsuit many times throughout the day based on the activity going on, which is why you will always hear me talk about a swim wardrobe. Speaking of a swimwear wardrobe, I am so excited about this year’s TSV. It's an item that every body will love! Sensational Spring Salad

We have a really nice restaurant in our neighborhood that is only open for breakfast and lunch.  My family loves going there for breakfast but our favorite dish is their chicken salad.  I don't know what it is that makes it soooo good but we just can't get enough of it!  I think part of their secret is to keep it simple. Chelsea and I were trying to think of something for dinner last night and decided we wanted Meghan's chicken salad.  Of course they close at 2:00pm so that was not gonna happen.  We decided to make it ourselves.  We were pleasantly surprise at how our chicken salad turned out.  This is a no frills recipe.  No grapes, nuts, onions etc.  (although my friend Holly make one with all the for mentioned extras that I love) we were going for quick and easy, Meghan's style chicken salad. No Frills Chicken Salad 

What you'll need:

4 boneless chicken breasts

1 cup chopped celery 

Salt & pepper

3 tbsp. Helmans mayonnaise 

1/2 tsp. Lawry's Seasoned salt

1/2 tsp. celery seed

Directions:

  • Season chicken breasts with salt & pepper bake uncovered 375 degrees until cooked throughout.  Let cool.

  • Cut chicken to bite sized pieces.  Mix in remaining ingredients. 

  • You can add more mayo if you like a creamier consistency. 

  • I served it on fresh spring mix greens and topped with fresh chopped tomatoes and cilantro.

Cool Ideas For Cool Crops

Now is the time for cool crops!  I like to plant my cool crops in raised planters and raised beds.  There are many benefits raised planters and beds – keeps pathway weeds from the garden soil, keeps little critters such as snails and slugs out, supplies great drainage – but the most timely advantage to a raised bed right now is that you can plant your cool crops now!  And with little else to do in the garden at this time, the work we put into our beds now, will produce fabulous benefits even sooner.  Wow, I guess I’m actually thinking “inside the box” for once! 

For my cabbage, I am going to use cedar window boxes for the look I want for my patio and growing small red beets and kale two of my preferred vegetables to sauté together and also use in salads.   My favorite beet is the “Early Wonder” sweet and wonderful and for kale I enjoy the “Dinosaur” variety which is sweet and nutty.  Instead of having the boxes sitting directly on the slate, I purchased cedar posts that I cut and attached to the window box to raise them 3ft.  This year I painted my boxes a vibrant green – I think the colors and textures of the vegetables will be really fun against the bright color.  With the soil mix in the container, I sow my beet and kale seeds about a half an inch apart and cover with a half an inch of soil.  I count down the days until harvest, which can be in May or June depending on the growth of my little friends.

My raised bed will also be painted the vibrant green and house my leaf lettuce, broccoli and herbs.  I will be planting “Salad Bowl”, “Black Seeded Simpson” and “Royal Oak” lettuce by sprinkling the seeds directly into the soil in rows right from the package.  I prefer to cover these seeds with about a quarter inch a very light soil and keep the soil damp until they germinate.  Maybe it’s my motherly instincts, but I always pamper my delicate lettuce babies until they sprout.  Lettuce harvests come within 6-8 weeks, so consider doing successive plantings every 2 to 3 weeks to keep the crop coming throughout the summer. My broccoli, I plant just as I do my cabbage – a half an inch apart and covered with a half an inch of soil. 

For my herb border in the raised bed this season, I just might purchase mature plants and simply add to my raised beds and containers.  It’s a personal choice whether to sow the seeds or buy plants, but the eager and visual gardener in me gets excited to select plants.

My Diamond Story

Diamonds can be small and diamonds can be big, but when they are given to you, from someone special, they all mean the same thing... I LOVE YOU FOREVER!!

My husband and I met in college. We were best of friends for the first three years, but by Senior year.. We got all goo-goo, crazy in love with each other (that's a story for another time, LOL)...

While he was in school, he worked at a movie theater, as the "ticket taker", to help support himself. He saved every penny and proudly went shopping for my engagement ring. (It must have been pretty scary for him, walking into a store and not knowing what his money could buy and not even knowing what he was looking for).

As he puts it, "I plopped down the $215 and asked for the biggest diamond ring I could get!"  The sales lady gave him 1/10th of a ct, in a high Tiffany setting, set in yellow gold.

When Chris gave me the ring, I couldn't have been. more happy. It was THE MOST BEAUTIFUL ring in the world to me. I knew how hard he worked and I knew that he loved me. The most joy came from knowing that we would be together forever. I remember when people wanted to see the ring, I held out my hand with such pride. Some would share my joy and others would remark on how small it was, or how 'cute' it was, or even ask me when the 'real' ring was coming. I would just smile, because I knew I had the love of my best friend forever.

Over 27 years have passed since then, three kids, 10 used cars and better paying jobs. When Chris offers to upsize my engagement ring, I always say, "SURE, but you can't use 'baby' for a trade in. If you want something bigger, it's gotta be on a new dime."  I would never trade in that ring. It means so much to me. I keep it safely tucked away with my very special pieces of jewelry, keepsakes and heirlooms...Don't get me wrong, the upsize came... I'm no fool!!

Every now and then I take "baby" out. We both look at it and reflect on the commitment that $215 bought, all those years ago. He still jokes,"Wanna trade it in?"...I smirk,"Nope and I'll keep you too".

Sooooo.... Big or small... They ALL mean the same thing... I LOVE YOU FOREVER!!

And here we are now .... sometimes from the smallest things, come the biggest and the best.... our Family!
