Mary Beth's Menu - Tex-Mex Chicken

In celebration of 'National Grilling Month', I present to you, Tex-Mex Chicken. Two great things about this easy recipe .... it can be made in either the oven or on the grill and it can be made as mild or as spicy as you like. I hope you enjoy it as much as I do.

Tex-Mex Chicken

Ingredients:

  • 4 boneless chicken breasts
  • 1/2 cup miracle whip
  • 1/4 cup of your favorite salsa
  • 1 teaspoon chili powder (more of you like it spicier)
Mix miracle whip, salsa and chili powder until well blended. Coat chicken with mixture. Discard any remaining mixture.
Broil uncovered in the oven for 5 minutes on each side
Or
Grill for 7-8 minutes on each side 
Serve with your favorite sides.
I used mild salsa, but if you would like to kick it up a notch, you can use hot or spicy salsa. You could also serve the chicken with by spooning extra salsa on top.

Vitamix Recipe - Strawberry Coconut Agua Fresca

Strawberry Coconut Agua Fresca

Recipe courtesy of Vitamix

Ingredients

  • 3 cups (450 g) frozen unsweetened strawberries
  • 2 cups (480 ml) coconut water
  • 1 lime, peeled
  • 2 Tablespoons (30 ml) agave nectar
  • 2 cups (480 ml) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute or until desired consistency is reached.
  5. Pass through a strainer or filtration bag.

 

This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

 

Style of Summer

Summer is in full swing and it's my favorite time of the year! I adore taking long walks in the park and collecting shells on the beach. Since I don't care to wear a bathing suit or shorts, I'm enjoying the ease and comfort of my newest obsession... My one piece romper dress! 

It's casual enough to wear to the beach or take walks in the park, yet dressy enough to wear out to dinner. Yesterday I went to a beautiful park with Pebbles and walked for hours in the hot summer sun. I was cool, comfortable, and felt confident bending over and sitting on the ground to play with Pebbles!

Dinner was next and I dined at an outdoor cafe feeling pretty and stylish in my romper dress. I'm planning on traveling in my romper dress this summer and it's going to a be great piece to transition into early fall.

Summer Travels

Hi everyone! I hope you all are enjoying the beginning of summer. We are traveling for the first time to the beautiful Scandinavian countries. The photos are from both Stockholm and Copenhagen. We have visited both Royal Palaces in each city and watched the changing of the guard along with a tour of the Crown Jewels. It's been pretty amazing! We took canal boat rides which really gives you an understanding of both cities. The food has been amazing... Maybe a little too good. :) The weather here is a little cool - like an early spring day in the New York area. The hotels have been extraordinary and most important the people are so polite, lovely and calm. I will keep you posted of the rest of my trip. Enjoy yourself.  (I'm getting wonderful inspiration for my future collections! I'm always working... at least a little bit.)!

It’s been awhile since I shared new “Torture of the Week” photos with you here in my blog. So I thought it would be fun to show you last month’s Facebook posts. As always, keep me updated as you give these and try. :) We are in this together!!!

 Torture of the Week

This "Torture of the Week" is more of a challenge. Can you do pull-ups?! You might surprise yourself. I didn't think I could. I will admit that I jumped up for my first one, and I can't do a lot of them, but I can do some, and I think that's pretty good! So try it and see for yourself. If you can't do one right now, you can definitely work up to it. Let me know how it goes, and don't believe people who tell you you can't!!!!

 

Torture of the Week

This #TortureOfTheWeek is all core! Legs extended, in a "V-sit," hold a balance ball in between your feet. Hold a medicine ball with arms straight up. Keep the medicine ball in the air (straight up without going side to side), while you move the balance ball from side to side, touching down on each side. 10 total reps, for a circuit. That medicine ball in the center makes it much harder!!!

 

Torture of the Week

This Torture of the Week is another one where you just need a wall. Lay on your back, left knee bent and foot on the wall. Lift your right leg as high as you can, straight up, tensing all your core muscles. Hold for a beat, lower back down to the floor. 10 reps to a circuit. Try to get your body as vertical as possible in the lift.

Mushrooms Stuffed with Cream Cheese & Bacon

You have probably heard Pat & I talk about how much we love bacon.  Here is another recipe featuring our favorite other white meat.  It makes for a great appetizer or side dish.  And surprisingly it heats up nicely in the microwave the next day. (just in case there are any left). {#emotions_dlg.biggrin}

 

Mushrooms Stuffed with Cream Cheese & Bacon

Ingredients

  • 20-24 button mushrooms
  • 8 oz cream cheese, softened
  • 4 strips bacon, finely chopped
  • 2 small shallots, peeled & finely chopped
  • 1 to 2 cloves garlic, peeled & minced
  • 1 cup chopped spinach
  • 2 tbsp green onions, chopped
  • 2 oz blue cheese, crumbled
  • 1 tbsp dry sherry
  • salt and pepper

Instructions

Gently wipe mushrooms to rid of any grit or dirt.  Break off stems from caps and finely chop.

In a pan over medium high heat, cook bacon until lightly brown and crisp. Remove from heat and set aside.

In the pan, add shallots, garlic and spinach until limp and fragrant. Add chopped mushroom stems and continue to cook, stirring regularly, for about 4 to 5 minutes. Season with salt and pepper to taste.

Add in sherry wine and continue to cook, stirring regularly, until mushrooms are tender and liquid is evaporated. Remove from pan and allow to cool.

In a bowl, combine cream cheese and blue cheese. Fold in mushroom mixture, crisp bacon and green onions.

Arrange mushroom caps gills down on a baking sheet and lightly brush with olive oil. Bake in a 400 F oven for about 4 to 5 minutes or just until mushrooms start to leak. Turn mushroom caps to cavity side up and using a small spoon, fill with stuffing mixture. Return to oven and bake at 400 F for another 5 to 6 minutes or until filling is heated through and tops are golden brown.

The Fantastic 4th of July!

The 4th of July is one of the most beloved national holidays!  It’s one of my favorite days for many reasons – but one thing that tops the list is that July 4th is all about outdoor celebrations.  It’s a hallmark American day commemorated with parades, fireworks and bursts of sparkle.

From a gardener and floral designer’s perspective the 4th is a truly festive occasion when red, white and blue take center stage.  There is also a wide range of “silvery” plants to add a bit of “fireworks” pop. For my tabletop arrangements I am inspired by bright blue hydrangeas, red garden roses and Queen Anne’s lace. And of course, I intend to add American flags wherever I can like in my entrance way containers that will overflow with red, white and blue perennials.  This is one holiday where “less is more” doesn’t apply. Independence Day is all about “more is better.”  You can never be too patriotic or fun!    

From a hostess perspective the 4th is ideal too!  Get creative with paper plates, napkins, table runners, and plastic silverware.  I like to have baskets with the cutlery wrapped in a bright napkin with some fun ribbon – simple, silver curly ribbon makes these bundles even happier.  Since I want to enjoy the day too, I place welcoming “help yourself” beverage and snack tables around the patio and lawn.  My grill and fire pit will be “ready, set, go” for the best of American picnic food - burgers, hot dogs, grilled corn and roasted potatoes.  My fire pit will turn into a “dessert station” complete with baskets full of all things s’mores – chocolate bars, marshmallows and graham crackers with added twists including bananas, peanut butter cups, caramels and chopped hazelnuts.  Anything goes with s’mores, I say.  

Cheers to my “Fantastic 4’s” – flags, friends, family and of course, flowers. Happy 4th of July everyone!

skinnytees TSV coming up tomorrow!

My mom and Founder of skinnytees, Linda Schlesinger, always loves to send my brother, David Schlesinger and I boxes of “goodies”.  Seeing that us kids are in Los Angeles, and Mom, in Michigan, can’t run over and fill our fridge from time to time, she spoils us by sending boxes of little mom gifts. Well, six years ago when I ripped open a box of skinnytees tank tops in about ten colors with a note saying “I think I’m onto something”. I would have never guessed that here we would stand today, a team of three family members with an incredible line of smoothwear that as a woman I can say, is a wardrobe essential!


Upon joining the family team I continue to be impressed and proud of the company my mother and brother have created and grown. Linda, being the creative stylist she is, has found her match with David's tech savvy strengths. Finding my own place within skinnytees has been exciting! My years experience as a talent agent paired with my work on both Barcelona and San Francisco's Fashion Week events has allowed me to get creative with our line, shooting new models for a fresh new website (coming soon!!!), setting up pop-up events and creating more of a local buzz around the brand in Los Angeles, where both David and I live.
Our continued growth and involvement with QVC is incredible and I am thrilled to be on board for this upcoming TSV!

Start the Celebrations for Christmas in July

Just one Christmas is not enough these days. For those who love to get a serious jump start on Christmas shopping, enjoying the fantastic sales at QVC (guilty!) why not take the inspiration to next level fun and throw a mini Christmas party in July? Your kids will love it (especially the chocolate-y strawberry recipe below) and the parents will think it’s just too-cute (and delicious with the strawberry arugula salad recipe below). Using strawberries is a fun and fresh way to incorporate some cheery color into the treats and is super seasonal to boot!

 

For the Parents: Balsamic Strawberry Arugula Salad

ingredients

Ingredients:

Arugula, tossed in olive oil and a bit of salt

Quartered strawberries, tossed in 1 or 2 teaspoons of balsamic vinegar and black pepper

Crumbled goat cheese

Walnuts (candied walnuts really takes you to the holiday spirit)

 

Directions:

This is so easy, just throw all the ingredients together, using your own judgment on quantity, depending on how big of a salad you want. Serve & Enjoy.

For the Kids: Strawberry Santa Hats

Ingredients:

Brownie bites from your local supermarket

Enough strawberries for as many bites as you want to make, hulled & trimmed

Whipped cream

Directions:

Making these treats are simple & really fun to do together as a family. Lay out the brownie bites on a serving platter. Make a small layer of whipped cream on top of each one. Then place strawberries on top of each one, with their tips pointing up. Add a final touch of whipped cream to tips. Keep cool and serve.

Twenty Years of Treasures!!!!

For our 20th wedding anniversary, Bill and I took a few days off before our big American West Fourth of July celebration on QVC to reminisce about our first two decades together.  Having been a match made in jewelry and gem heaven, one of our first dates was the Santa Fe Indian Market, and our next big event was the Tucson Gem and Mineral Show.  We have a passion for gems, but more importantly, we truly appreciate the quality of Mother Nature’s finest. Over the past 20 years, we have sought out and captured the best opaque gemstones we could find at the show.  As you know, true gem magic is nothing we can control, which calls for celebration when you and I have the opportunity to grasp something fabulous! The time is now!

I am thrilled to announce that over the past eight months I have been visiting our vault of fabulous gems, many of them turquoise, and in sizes no longer attainable.  Some of the cabochons you will see will be nearly an inch long and in the clearest of color!  This has been a project very near and dear to me, dedicated to honoring these treasures of ours with designs I feel you will love. Fun Summer Exercises

July is your month to eat better, exercise, and feel beautiful. Take this month to focus on achieving your summer slim-down goals. In addition to eating healthy, I choose to keep active with a variety of summer workouts to stay motivated. Here are some of my favorite ways to incorporate exercise into my busy weekly routine.

Hot Yoga
There's nothing I enjoy more than getting a group of girlfriends together at the yoga studio for a good sweat and release of built up toxins to reset your body for the week.

Walking my Golden Retriever
I love to start my day by taking my active golden retriever, Ollie, for a walk.

Paddle-Boarding
My newest exercise adventure is paddle-boarding. What a fantastic way to burn calories and enjoy an hour on the water!

How do you exercise in the summer? I'd love to hear how you achieve your slim-down goals.
