“Hattitude” For Education

I belong to a national organization of incredible women who dedicate their time and talents to helping others. Each year, our local chapter hosts  “Hattitude for Education” Hat Auction and Luncheon.

The event is a fun afternoon with raffles and prizes, culminating with a hat fashion show and auction. It’s a great time for friends to gather for a good cause, and wear and buy spectacular hats. The money raised provides scholarships for deserving college-bound students in need.

This year’s event was one of our best ever. And I was thrilled that some of my QVC friends came out in support. Do you recognize anyone?

I Say Tomato…

Tomatoes – Yes, it’s time!  My mouth waters just thinking of tomato season!

This perfect fruit is just that, perfect. There is nothing and I mean nothing more delicious and more satisfying than picking a tomato off the vine and eating it right then and there.  My tomatoes are lucky if they make it into the kitchen to become my favorite cheap white bread, mayo and tomato sandwich. I can go on and on…as you can tell.

 

I like March to get a head start on my tomato crop by sowing seeds in flats.  Once the plants sprout to 2” or so, I sort them out into individual containers and wait to transplant them outside.  My favorite heirloom tomato is the Brandywine – it’s an ugly tomato, but delicious.  I love the Early Girl, because I love the taste and the fact it does come earlier than other varieties.  And last but not least, I have to have a cherry tomato and I adore the Yellow Cherry Tomato which is acid free!  We have a large area for our tomato crop, but I also have two pots with a trellis right outside my back door too.  Plant out times will obviously vary based on your climate zone, and if you are unsure, it is very easy to look up this information.  I do not fertilize when I transfer them into the soil, but after about two weeks or so I add fertilizer.  The reason I wait is to give the plants time to root and be able to absorb the nutrients. 

 

This gets me so excited I have to share one more thing – the best tomato pie recipe.   Your mouth will love it and your hips will too, but it’s well worth it.

Take a frozen pie crust and bake per directions on the package.  Once baked and cooled, layer the pie in this order:  large slices of tomato, a shake of Crazy Jane’s Mixed Up Salt, finely chopped red onions, fresh chopped basil, shredded cheddar cheese – you should be able to get 2-3+ layers in the shell.  Once full, top the pie with a cup of mayo, sealing it to the edges so it creates a custard-like topping.  Bake at 350 degrees for 35-40 minutes.  Let cool a few minutes before you serve.

Step 2: Follow QVC on Pinterest by clicking “Follow us on Pinterest” via the entry form or by navigating to http://pinterest.com/qvc and clicking the “Follow All” button at the top of the page (assuming that you are not following QVC on Pinterest already).

Step 3: Enter your email address in the space provided on the entry form.

Step 4: Click “Submit& Pin” to pin the image to any board on your Pinterest  profile.

If a Winner is unable or unwilling to accept the prize he/she will be disqualified and the prize forfeited; and, in such event, an alternate Winner shall be selected from among all remaining eligible entries received. A MUCH NEEDED GETAWAY!

Happy day, everyone!! We just returned from a lovely vacation at the Secrets Maroma Beach resort in Riviera Cancun, Mexico. Yes, we were just away in London in December, but that was work-related. This vacation was pure relaxation. I feel so very blessed that we were able to get away and go to such a gorgeous resort. Glen and I really did not join in the many activities offered at Secrets; we just needed to eat, drink, sleep and spend some quality time by the pool and beach. Here are a few photos of our trip!

We spent a lot of time at this end of the pool. We could see the Caribbean from this spot!

Having some fun on St. Patrick’s Day!! (Those mugs were fake, by the way!!)

One morning we woke up very early to catch the sunrise, and Glen took this fun shot of me and my footprints in the sand.

One evening we attend the “Fire Show” in the theater. Let me tell you – it was FANTASTIC!! I was very impressed with this show, and I have seen a lot of shows!!!

Just watch your eyebrows!!

There was so much yummy food available. One night the resort hosted a Mexican outdoor barbecue with tons of food and desserts, even jewelry and gift vendors.

Fresh-made churros anyone??

My favorite – grilled corn and veggies!!

Secrets Maroma has several restaurants on site. One of my favorites was the French restaurant!

Amongst the many activities offered, I attended a wine tasting while Glen was napping. This is the resort sommelier – he was very informative!! 

On our last full day of vacation, we “rented” a beach-front cabana for the day.

I felt so relaxed!!

This was my last glass of champagne, toasting a wonderful vacation!!

We really had a great trip and hope we get to return to this wonderful resort very soon!

Kitchen "Aid"

My KitchenAid stand mixer has a designated spot in my kitchen -- its own cupboard. I can’t imagine not having it when I need it. I have lots of recipes that are made better and easier because I use my stand mixer. But my favorite is probably mashed potatoes.

I never knew mashed potatoes could be so velvety and creamy until I made them with my KitchenAid. Now, that’s the only way I’ll prepare them. No matter what kind of mashed potatoes you like -- basic, garlic, cheesy, bacon, lobster, buttermilk, sour cream and chives -- the KitchenAid mixer ensures your mashed potatoes will be the exact texture you want. Yum!

Here’s one of my favorite mashed potato recipes. Try it in your KitchenAid Mixer and let me know what you think. 

Garlic Mashed Potatoes

Ingredients:

3 lbs unpeeled red potatoes, quartered

2 sticks butter, room temperature

3/4 cup grated Romano Cheese

6 cloves finely chopped garlic (approximately 2 tablespoons)

1 teaspoon salt

1 teaspoon dried oregano

1 dash black pepper

Add a pinch of salt to large pot of water and bring to a boil. Add unpeeled, quartered red potatoes and cook for 45 minutes. When potatoes are tender, drain water and pour into KitchenAid mixing bowl. Add butter, cheese, garlic, salt, oregano and pepper. Using the flat beater attachment, mix ingredients. Start at a low speed and increase to medium until potatoes are a creamy consistency. Top with parsley and serve. Makes 8-10 servings.

Prints!

Hello Mackie friends!

Is it just me or do prints seem to have a fresh look?  I was out at the mall last weekend, which is very rare for me these days.  As I was standing in line to check out, I looked back at the store around me.  It was like eye candy.  The patterns of all the prints suddenly just popped out everywhere… in a good way!  I realized that patterns are huge.  And not just big one note patterns… a lot of geometric forms or something organic and flowing worked into something with more structure.  I fell in love at that moment. 

Are you someone who usually stays away from pattern?  I know, I’ve been there my friend, but I decided to try.  It’s just too tempting.  As I always advise my kids, you have to just try… then if you don’t like don’t do it.

I did notice that the patterns are being shown with a solid… meaning one on top and the other on the bottom, and vice versa.  I have not yet worn my two new purchases, which are ankle pants with delightful patterns, but I have taken two photos of the designs to share with you:

What do you think?  Both designs have small patterns so I am really excited about the colors that I can pair with them.  I have not gotten anything yet in the way of tops with pattern.  Bob Mackie has several choices at QVC.com that you can take a peek at:

This is A226911 Bob Mackie's Mandarin Collar Print Button Front Blouse. This option gives you a blouse look that you can wear buttoned up or open with a tee or tank underneath.  It’s actually referred to as a marquety print.  This is the green, but it also comes in black, blue, cocoa and fuchsia.  I particularly like the cute stand up mandarin collar and the offset finish of the pattern at the end of the sleeves.  The easy care poly is the look and feel of silk.

If you are looking for a knit top, this is your pick.  It’s a ‘most wished for’ item on qvc.com and the print is awesome.  This is the blue multi choice in A238463 Bob Mackie's 3/4 Sleeve Geometric Print Scoop Knit Top but brown and purple multi are two other dynamite choices to check out.

Another most wished for top is A251365 Bob’s Bracelet Sleeve Placed Print Chiffon Blouse.  Placed or placement prints are always a sign of quality because they have put the garment together with the patterns lined up to keep the flow of the design intact.  You won’t find this with all your print choices out there!  It’s light and airy with the look and feel of chiffon.  Isn’t the lilac beautiful with the pops of mint green and pink running through it?  It reminds me of feathery leaves.  Other colors are green, cocoa and periwinkle.

There will be more to see as the spring months come along and Bob debuts more of his collection.  I am actually on the train right now as I write this to visit the design studio in New York City.  I’ll be previewing the items coming in for April, May and June and I can’t wait to share those with you.

Road to the Midnight Kickoff

At the start of every day we present our Today's Special Value. This, the very first presentation of the day, is a big deal, and is watched by many....so, needless to say I was focused on having a great time and doing well:)

 

Here's my minute by minute (kind of {#emotions_dlg.biggrin})

 

 

Two days leading up to kickoff: Meet with Susan Graver, Get haircut, finalize outfit.

Day of Kickoff

8:30 p.m. Go to product central and review the Today's Special Value. Here's where I memorize the colors (not just blue, brilliant blue), scrutinize the embellishments, and try different color combinations

8:50 p.m. Getting a good luck hug from a midnight king...Dan Wheeler

9:00 p.m. In the salon with Karen getting all dolled up

9:50 p.m. Hugging it out with Captain Midnight-- Rick Domeier, with Mary DeAngelis posing in the Today's Special Value in the background

10:30 p.m. Meeting with the production team to discuss camera moves and blocking (who will move where/when)

Showtime-- Susan and I present the Today's Special Value

So.... I was nervous and excited, but once I started, and Susan joined me, the nervousness just melted away. I had a great time, and I am happy to have that "first" Midnight Kickoff under my belt.

Keeping My Kids Entertained, One Cake Pop At a Time!

Last Sunday, my kids were complaining that they had nothing to do, so I pulled out a box filled with everything they needed to make Easter Bunny cake pops. They loved the idea! In a couple of hours, they were eating their pops with giant smiles on their faces. The kitchen was wrecked, but the cake pops were delicious! I took a couple of pictures and posted them on my Facebook page (Sandra Bennett QVC) and didn't think much more about it.

However, since then, I've gotten several requests for the recipe and questions about how we decorated them. In fact, the lovely ladies who work on our social media team suggested I write a blog about it. I would have taken better pictures to document the process if I had know I would be writing a blog! I also let my girls, ages 11 and four, do 100% of the decorating. As their mom, I think they are the best looking cake pops ever, but this is not the type of Martha Stewart or Pintrest-level perfection you typically see online. {#emotions_dlg.biggrin}

Also, I have to confess, that I bought a cake pop kit that had all of the tools we needed. Still, we have made cake pops many times with just a standard boxed cake mix, a can of frosting, and candy melts from the craft store. They are actually super easy (just time consuming) and the kit was completely unnecessary. A quick internet search will turn up dozens of cake pop recipes, but here is the one we always use:

After making these several times, we have learned to use our hands to smash the cake into crumbs, not pieces. Even small pieces of cake don't hold together well. Also, don't forget to freeze the cake pops for about 30 minutes before you dip them in the melted candy coating. Often, we don't decorate the cake pops with anything. When we do, we just use regular icing. Nothing fancy. In this case, we used pastel candy corn to make bunny ears, but you could just as easily roll your cake into egg shapes and use the icing to decorate Easter Egg cake pops.

Getting out my sassy sandals – and springtime recipes – for March 30 Cooking on Q!

I have a confession to make. You know those people who break out the spring wardrobe at the first hint of warmth in the air? Yep, I’m one of them. Especially after THIS winter! I have all my favorite sandals lined up and ready to go! (OK, I may be shivering, but at least I’m shivering in style!)

The same thing goes on in my kitchen. After a long winter of bubbling casseroles and delicious stews that simmer for hours, I just can’t wait to switch things up a bit. Especially because some of my favorite springtime recipes are so incredibly easy, fresh and fun.

And that’s why I love prepping for Cooking on Q Spring Edition. It usually starts months before the event, when there’s still snow on the ground. But I brew up some iced green tea and start thinking about picnics and those first warm spring days, where everyone remembers how much fun it is to be outside again.

I can’t wait to show you all the yummy dishes that came from those brainstorming sessions. I think all the extra snow on the ground this year served as added inspiration! Cooking on Q is always a crazy, chaotic, fun-filled day. In a way, it’s a lot like spring, when schedules get busier, weekends get crazier and it seems like everyone is rushing somewhere.

That’s why I’m sharing one of my favorite recipes for springtime entertaining – Easy-Breezy Guacamole. With only 5 ingredients, it’s super simple, super fresh, and you can whip it up in about 5 minutes. (Although, it tastes so incredible, no one will believe that for a second!) Perfect for an easy night with friends or that first warm spring weekend get-together. I like to serve it in our Gingham Gardens Set…it’s so charming and cheerful, it feels like a breath of fresh spring air.

Tara’s Easy-Breezy Guacamole

2 – 3 ripe avocados

2 – 3 cloves minced garlic, to taste

1 tablespoon salsa

½ lime

Salt and pepper, to taste

 

1) Scoop out avocado from shell and place in a small temp-tations bowl.  Mash with a fork until almost smooth.

2) Stir in garlic and salsa.  Squeeze juice from lime over the top and sprinkle with salt and pepper.  Mix well.

3) Serve with tortilla chips.

So, I can’t promise I’ll be sporting my sandals on March 30th. (Mother Nature has definitely shown us who’s boss this year.) A: It is always nice to have a second bowl! Think of all the accompaniments and additional mixing steps it will allow you to do without having to stop and wash your mixing bowl: frosting for a cake, fillings, whipped cream toppings, combining all the dry ingredients; you will find it really comes in handy. And, because it is shorter and slightly smaller than the 4.5-quart bowl, it will handle those small jobs quickly and will easily fit in the top rack of your dishwasher.

Q: What attachments can I use on the Ultra Plus Stand Mixer?

A: All KitchenAid stand mixer attachments are universal and will fit any KitchenAid stand mixer. Additionally, all KitchenAid stand mixers feature a Multipurpose Attachment Hub that powers the attachments. By using the various attachments you are now able to expand the capabilities of your stand mixer. Simply remove the Hub cover, insert an attachment and convert the stand mixer into a meat and cheese grinder; fruit and vegetable slicer, shredder, strainer or juicer; pasta sheet roller, cutter, or shaper; grain mill; sausage stuffer, and many more culinary options. You can even enjoy delicious homemade ice cream and sorbets with the KitchenAid Ice Cream Maker attachment. Q: What is the Flex Edge Beater and what does it do?

A: The Flex Edge Beater is a coated metal beater with a flexible edge. It provides more thorough and faster ingredient incorporation. It is perfect for any recipe that states "stop and scrape the bowl". It also makes an excellent tool to wipe the bowl clean when pouring finished batters.

Q: How will I know when to use the Flex Edge Beater versus the flat beater with my recipe?

A: The easiest way to decide which beater to use is to read through the recipe and if the directions read "stop and scrape the mixing bowl" that recipe is a candidate for the Flex Edge Beater. The Flex Edge does the best job on foods that tend to stick and/or collect to the sides of the mixing bowl, like cream cheese, butter, nut butters, and honey. Use the Flex Edge for end products that would be described as "creamy" and "silky".

The flat beater works well for foods that have texture. Mashed potatoes that are smooth but not gummy, quiche, vegetable casseroles, and many quick breads are all good choices for the flat beater. Use the flat beater when cutting a solid fat-like lard, shortening, or butter into flour. The fat encapsulated by the flour needs to retain its structure to produce the flaky texture so desired in items like pie crusts, biscuits, scones, and shortbread.

Remember that the flat beater can do the work of any Flex Edge recipe, but the Flex Edge saves you the labor and time of having to stop and scrape the bowl.

Q: Is the Flex Edge Beater dishwasher-safe?

A: Yes, it is the first and only coated metal flexible beater that will last for many years and is dishwasher-safe.

Q: Are the burnished beaters and wire-whip dishwasher-safe?

A: No. Handwashing only is recommended for the burnished flat beater, dough hook, and 6-wire whip.

Q: What is the advantage of a pour shield?

A: The see-through, one-piece pour shield helps prevent splash-outs and makes it easier than ever to add ingredients. The pour shield is top-rack dishwasher-safe.

Gemstones, Birthdays, the Basel Jewelry Show, and Why My Waistline Keeps Expanding!

Sorry that I haven’t been in better touch but it has been a hectic few months.  We were having a terrible blizzard here in Pennsylvania the day of January Gem Day and I had to leave the finale a little early.  A very nice guy from security was making one last run in the snow and offered to take me to my home.  

I was leaving the next morning for vacation but because of the storm, was stuck at home for two days.  Finally, after a quick holiday, I headed to Vicenza for the Jewelry Fair, to see what new direction and colors were highlighted.   From there, I flew directly to Thailand and then Hong Kong to work on new gemstones, Vault Discoveries, and Master Cut Gemstones.  Wow, I can’t wait to share what I found.  I can’t share details with you yet, but a couple of hints.  One of my favorite gemstones from a mine that has been closed for almost 100 years that produced gems fit for a Queen.  Another stone is a beautiful blue/violet stone that is only found in one location in the world and weighs over 10 cts each.  The finest color I have ever seen.

Back in the States for two days, it was time to head to the Tucson Gem Show.  This is the largest gemstone show in the world and where we always find new colors of gemstones and gem opportunities.  A week of fabulous gemstones and Mexican food added not only to our great gem offerings but also to my waistline.

Two weeks later, I flew to Shreveport, LA to celebrate my Mothers 90th Birthday.  She is doing great and we had a fabulous dinner and visit.   When we asked her what she wanted for her birthday, she replied “I want to go whale watching on Cape Cod."  My brothers and sisters and I are taking her up the second week of May and really looking forward to it.

Today, I am leaving for the Basel Jewelry Show in Switzerland.   This is one of the most important jewelry shows in the world as it is where most of the trends, directions, and colors start.  Many of the most famous designers in the world are showcased there and I often run into some of the most celebrated American jewelry designers.

One of my favorite things about being the host of In the Kitchen with David is having the opportunity to meet some truly incredible chefs. I’m not a chef, as I’ve said many times. But, I love everything about cooking and I love being around people who understand the science and technicalities behind baking a loaf of bread or caramelizing onions. I’ve learned so much from the talented people we’ve had on the show and I’m thrilled to share that another such guest is joining us this Sunday…Carla Hall!

She’s bringing cookies as well as her cookbook with her on Sunday. And, she was very kind to let me share one of her desserts with you…Salted Peanut Chocolate Pudding Tarts.

Salted Peanut Chocolate Pudding Tarts

Ingredients:

  • 3 tablespoons cornstarch
  • 2/3 cup sugar
  • 2 tablespoons plus 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon table salt
  • 2-2/3 cups whole milk
  • 1 cup heavy cream
  • 3 ounces bittersweet (70%) chocolate, melted
  • 3 ounces high-quality milk (41%) chocolate, melted
  • 4 large egg yolks
  • 2 Tablespoons unsalted butter, at room temperature
  • 2 teaspoons vanilla extract
  • Salted Peanut Shortbread (page 195), baked into eight 4-inch tart shells
  • Milk Chocolate Ganache (recipe follows), warm
  • 1/2 cup chopped roasted salted peanuts

Directions:

  1. In a large saucepan, whisk the cornstarch, sugar, cocoa powder, and salt. Gradually whisk in the milk and cream, and bring to a low boil over medium-low heat. Remove from the heat and whisk in the two melted chocolates. Continue whisking until smooth.
  2. In a large bowl, whisk the egg yolks until broken. Very gradually add a little of the hot milk mixture to the yolks, whisking continuously. When the bottom of the mixing bowl is warm, whisk in the remaining hot milk.
  3. Pour the mixture back into the saucepan and cook over medium-low heat, stirring continuously. Be sure to scrape along the bottom and sides of the pan. Continue cooking and stirring until the pudding thickens, increasing the speed of your stirring as the custard gets thicker, about 10 minutes. You want to actually boil the custard but not burn it, so keep stirring while it bubbles and gets really thick. Let it boil for 30 seconds, then remove it from the heat.
  4. Strain the pudding through a fine-mesh sieve into a large bowl. Fold in the butter and vanilla until fully incorporated. Divide among the tart shells and refrigerate, uncovered, until firm and set, at least for hours and up to overnight.
  5. Divide the warm ganache among the tarts, swirling to evenly coat the tops. Sprinkle 1 tablespoon of the peanuts on top of each tart. Refrigerate, uncovered, until set, at least 10 minutes and up to 1 day.

Milk Chocolate Ganache

Ingredients:

  • 1/4 cup chopped milk chocolate
  • 1 cup chopped bittersweet chocolate
  • 1 cup heavy cream

Directions:

  1. Place the chocolate in a large bowl. Heat the cream in a small saucepan until bubbles form around the edge. Pour over the chocolate, then gently stir with a wooden spoon until smooth.

Doesn’t that sound delicious? I’m also looking forward to Carla's Chicken with Milk Gravy and her Last Supper Buttered Tarragon Peas—which apparently made Jacques Pépin swoon! Both recipes remind me of warm weather and healthy, veggie comfort food, which is sings spring!

Speaking of spring recipes, we’ve got one “It’s Not Easy Eating Green” treat left and it’s coming up this Sunday. It makes a perfect sweet appetizer or dessert for Easter, Passover, and all those upcoming celebrations....Pistachio Dip!

Pistachio Dip

Pistachio Dip
Yields 3-1/4 cups

Ingredients:

  • 1 cup nonfat or 1% milk, cold
  • 1-1/2 cups plain nonfat Greek yogurt, cold
  • 2 Tbsp honey
  • 1 (1-oz) package sugar-free, fat-free instant pistachio pudding mix
  • 1/3 cup finely ground pistachios

Directions:

  1. Place the milk, yogurt, and honey in a medium-size mixing bowl and gently hand-whisk until fully combined.
  2. Add the pistachio pudding mix and whisk immediately, until the pudding powder is completely incorporated and the mixture is smooth with no lumps. Add the finely ground pistachios and whisk until well distributed. Serve immediately.

Mom says “Make your bed every morning…”

I know that so many of you have either heard these words from your mom, or said them to your own children at some point in time.  “Make your bed first thing in the morning!If you have a clean bedroom you’ll have a clear mind.”

My mom has always promoted the idea of making your bedroom a sanctuary.  A place that’s beautiful, clean, and comfortable.  So it’s no wonder to me, that she eventually found her passion selling fine linens on 5th Ave in New York City for the past 20 yrs. 

I remember when my mom got her job.  She didn’t know anything about thread count (for sheets), fill-power (for down comforters), grams per square meter (for towels), etc.  She had to learn everything from scratch; and as her curious little sidekick - I learned along with her!  I sat with her every night after finishing my homework to help her learn about the ins and outs of linens.  And when it came time to help launder and make all the beds in the house, she sure did teach me a thing or two (most importantly, how to fold a fitted sheet!).

So it’s no wonder that my path has led me to host an hour called Spring Linen’s Update on April 1 from 6-7am EST.  It will be such a joy talking with you about this passion and sharing ideas on making your bedroom a sanctuary. 

Below is a picture of how I currently have my bed setup! I’m desperate for some spring, so it’s all white, white, white right now!  Don’t mind the puppies (Prince Charming and Coco)…they think it’s THEIR bed! HA! HA! {#emotions_dlg.biggrin}

Happy Easter, My Loves!

Easter is so important in our home! We really try to make it special for the girls to let them know it's a meaningful holiday for what we believe in. We use Easter as a way to show the girls that miracles do happen and it gives us hope and strength that we carry with us throughout the year!

We believe that Easter is a great holiday to prove how powerful God is and how lucky we all are to have that belief in our lives! But that doesn’t mean we don’t have fun too!

Decorating the house for Easter is SO fun! In general, decorating for any holiday allows me to be really creative and get everyone in the mood. And the best thing about decorating for Easter is that it’s the PERFECT holiday for Mally Beauty! As you know, I love pinks, pastels, glitter and sparkly things so decorating for Easter allows me go a little cray-cray and have the Mally Beauty colors take over the entire house… well, more than normal. ;)

We have bunnies and chicks and crosses all around the house. The living room, dining room and kitchen are where we do the most decorating for Easter, as those are the places where we spend most of our family time! We really embrace the color and everything in our home is pastels, golds and silvers!

Phil and I also like to do Easter egg hunts and coloring eggs with the girls! For the Easter egg hunts, we usually do one at our house with our family, and then we also go to a local farm or orchard so the girls can play with other kids and search for eggs together!

The dogs get involved too! Now that we have a brand new puppy (Pandy), she is going to have to learn to get in the groove... and Bantay will show her the way!
