This is a rich and hearty soup. It's a nice warm-me-up on a cold day. I hope you enjoy it!
Wild Rice Soup
Ingredients:
- 1/2 pound bacon (cooked crispy, drained and crumbled)
- 1 cup cooked wild rice
- 1 can cream of chicken soup
- 1 can cream of potato soup
- 3 cups milk
- 1 cup shredded American cheese
- dab of minced onion
- dab of parsley
- salt and pepper, as desired
Mix all ingredients (except bacon) in a large pot and bring to a slight boil. Stir, turn down heat to a simmer and cover for approximately 10-15 minutes.
Add bacon. Stir and remove lid. Continue simmering for another 5 minutes. Serve with your favorite bread or crackers.
