Cheeseburger-Stuffed Baked Potatoes this Wednesday! How do You Like Your Burgers?

Hello, foodies…

The Monday after an awards show is so fun—chatting with everyone about your favorite moments and funniest speeches. I loved the Golden Globes this year, and can only imagine what great food people cooked up at home to celebrate the special event!

Stuffed recipes are an opportunity to get creative in the kitchen and play around with flavor combinations. They’re fun for weeknight family meals, but are also elegant enough for a dinner party. The food world seems to be in love with stuffed everything right now, and I couldn’t be happier about it. This week, I’m counting down the days until Wednesday’s In the Kitchen with David because I’m so excited to make my Cheeseburger-Stuffed Baked Potatoes. You know why I love these stuffed spuds so much? They’re an inventive take on one of the most delicious & classic American meals—burgers & fries. I promise, you won’t miss the bun! Here’s the recipe.


Cheeseburger-Stuffed Baked Potatoes

Serves 4

This recipe is prepared using the Prepology® 4-Piece Polka Dot Paring Set (K39015).

Ingredients:

Baked potatoes:

·         4 Idaho potatoes, washed

Cheese sauce:

·         2 tsp butter

·         2 tsp flour

·         1/4 tsp salt

·         1/8 tsp black pepper

·         1/2 cup milk

·         10 slices American cheese, chopped

Filling:

·         1/2 lb ground beef

·         1/4 cup onion, finely diced

·         1/8 tsp salt

·         1/8 tsp black pepper

·         1 tsp Worcestershire sauce

·         2 Tbsp yellow mustard

·         4 Tbsp ketchup

·         2 Tbsp dill relish

Directions:

 

  1. 1.       To prepare the baked potatoes, preheat the oven to 350°F. Place the potatoes in an 8” x 8” baking pan. Cover the pan with foil and bake until soft, about 1 hour. When the potatoes have finished baking, let them cool until you’re able to handle them comfortably. While the potatoes are cooling, make the cheese sauce and the filling.

 

  1. 2.       To prepare the cheese sauce, melt the butter in a small sauce pot. Add the flour and cook, while stirring, for 30 seconds. Add the salt, pepper, and milk. Bring the mixture to a simmer, stirring constantly. When the sauce has thickened, remove from the heat and add the cheese. Stir until the cheese is completely melted.

 

  1. 3.       To prepare the filling, brown the ground beef with the onion in a small sauté pan over medium heat. Drain off the extra fat and place the meat into a medium-size bowl. Add the salt, black pepper, Worcestershire sauce, mustard, ketchup, dill relish, and cheese sauce to the bowl and set aside.

 

  1. 4.       Once the potatoes have cooled, cut an opening, lengthwise, from the top of the potato. Scoop out the flesh, creating a shell. Take 1/2 cup of the potato flesh and chop it into small pieces and set aside. Repeat with the remaining potatoes. Place the empty potato shells back into the baking pan.

 

  1. 5.       To assemble the baked potatoes, fold in the reserved potato flesh with the ground beef mixture. Fill the prepared potato shells with the mixture and bake for 45 minutes.

 

Between this recipe and the Southwestern Style Stuffed Sweet Potatoes recipe that Jenna shared with us last week, your twice baked potatoes will never look the same after “Stuff-It” month! There are countless ways to customize stuffed potatoes, especially when you think of how you enjoy your favorite burger. That brings me to today’s blog question: How do you like your burgers? Are you a cheese, or no cheese person? Do you prefer beef, turkey, or veggie? What about toppings? If you love sautéed mushrooms and Swiss, alter this recipe to reflect t your favorite flavors! Prefer a turkey burger with Pepper Jack? Go for it! This recipe is sure to be a winner in your house—however you choose to prepare it.

Speaking of winners, now that the Golden Globes has kicked off awards season, everyone’s excited for the next night of glitz and glamour: the Academy Awards, or the Oscars. A lot of you responded to our Foodie Q on David’s Facebook page today that it’s your favorite awards show, and it got me thinking about good party food to go with the event. Our friends at America’s Test Kitchen shared this video for how to make Stuffed Portabella Mushrooms, and I think it would be a Hollywood-worthy choice for an Oscars party. You could even substitute button mushrooms to make them passable hors d’oeuvres!
