Mary Beth's Menu - Mother's Day Edition

Happy Mother's Day!! And in honor of Mother's Day I thought I would take the opportunity to share one of my mom's favorite recipes with you. 

Mom's Swedish Rice Pudding

Ingredients:

1 heaping cup medium grain rice (not instant)

1/2 gallon whole milk

6 egg yolks (saving the egg white)

1 cup sugar

1/2 teaspoon salt

1 tablespoon vanilla extract

2 teaspoon lemon flavor

 

Rinse the rice in a strainer. Heat milk on the stove top and then add rice. Cook rice over medium heat until rice is soft. Add sugar and salt to rice after it is soft. Beat 6 egg yolks then add them to the rice mixture stirring fast. Add vanilla and lemon. Remove from heat. As pudding cools, fluff every ten minutes, Great served warm or cold. Add cinnamon and/or raisins as desired.
