Mary Beth's Menu - Gearing Up For Memorial Day

Veggie / Fruit Salad

Ingredients:

  • 1 bunch of broccoli
  • 1 cup seedless red grapes
  • 1 cup seedless green grapes
  • 1 cup chopped celery
  • 1 bunch chopped green onions (scallions)
  • 1/2 pound bacon
  • 1 cup slivered almonds
  • 1 cup Mayonnaise or Miracle Whip
  • 1/4 cup sugar
  • 2 tablespoons white vinegar
Cook bacon until crispy. Drain the grease on paper towels and then crumble into bite-sized pieces.
Chop broccoli to desired size. I like small florettes. Chop celery and green onions. Slice grapes in half. In a large bowl mix everything except mayo, sugar and vinegar.
In a small mixing bowl, stir together the mayo sugar and vinegar until creamy. Pour mixture over fruits and veggies stirring well. Chill for at least one hour prior to serving for optimal flavor.
This recipe can easily be tailored to suit your taste. I did not have any celery on hand, so I omitted it this time. You could also raisins instead of grapes, cashew pieces instead of almonds and red onions instead of green onions. Be creative and enjoy!
This is a great dish to bring to a cookout and with Memorial Day right around the corner, I thought you would like this one.
