Today is the summer solstice -- the first day of summer! One of my favorite things to do in summer is visit farmer's markets and fruit stands. I love summer fruits, and they’re never better than when you can find them grown locally.
In honor of summer and summer fruits, I used nectarines for my Day 3 Rangemate recipe. If you haven’t tried nectarines, they’re basically fuzz-less peaches. I used the Rangemate to grill them for an easy delicious dessert.
Grilled Nectarines
Ingredients:
2 ripe nectarines
olive oil
maple syrup
Pit the nectarines and cut each into 8 wedges. Place the wedges in a bowl, drizzle with olive oil and maple syrup and toss. Once the nectarines are coated, place them in the Rangemate grill pan. Cover pan with the lid and microwave for 3-4 minutes. Turn the nectarines over and microwave for another 2 minutes. Remove and serve.
Grilled nectarines are delicious topped with a little whipped cream, or served over ice cream on a hot summer day!
