If you have been looking at my recipes you have probably noticed a theme in my cooking. I love spinach & mushrooms. I try to incorporate them in as many dishes as possible. This recipe has a bright fresh flavor. I prefer the boneless chicken thighs (a little less fat). Brown & bake, so it is pretty simple. Enjoy!
Chicken Mushrooms in White Wine & Lemon Sauce
Ingredients:
6-8 boneless, skinless chicken thighs
1 cup slices mushrooms
1 cup chopped spinach
1 cup dry white wine
1 cup chicken stock
2 cloves fresh chopped garlic
1/4 cup lemon juice
flour
1 tsp. dried thyme
olive oil
seasoned salt
pepper
Directions:
Season chicken thighs with seasoned salt & pepper. Coat seasoned thighs in flour. Saute in olive oil until brown on both sides, remove from the pan & place in a casserole dish. Deglaze the pan with white wine & chicken stock, Add lemon juice, mushrooms, spinach, garlic & thyme. Bring to a boil. Pour the sauce over the chicken, bake covered for 25 minutes. I served mine with mashed potatoes but rice or noodles would be good too. Enjoy!
