Well, I'm back from my vacation to Disney world, and I'm ready for my next installment of The Wishful Dish! My show is on Mondays at 5pm Eastern, and if you order something frozen, it gets there by Friday! My Friday Night Meal for this week is from Kansas City Steak Company. Filet mignon that has been wrapped in the most delicious double smoked hickory bacon. A classic with a twist! I was thinking about what would complement the steaks nicely, and of course, I came up with mashed potatoes. But, my mashed potatoes also have a twist. My secret ingredient is the Steak and Prime Rib seasoning that comes with the Kansas City Steaks. Here is the recipe:
8 medium red potatoes
2 tsp crushed garlic
1/2 cup butter
1/4 cup half and half or low fat milk of choice
1/4 tsp Kansas City Steak seasoning
1/4 tsp garlic powder (optional)
First, cube the potatoes and place in a pot. Cover the potatoes with water, and bring to a boil. Add 1 tsp of the garlic to the boiling water to infuse the flavor into the potatoes. Save the other tsp for later. Boil for 10 minutes, or until the potatoes are tender. Drain the water, and add the butter. If you don't have a potato masher, or if you prefer smoother mashed potatoes, use a hand mixer (or a Kitchenaid!), and mash to your desired consistency. When the butter is melted, add the rest of the ingredients to the bowl, and mash (or mix) to your heart's delight! If you want to cut calories, substitute low fat milk in place of the half and half. Just stay away from skim milk! It really changes the consistency. Also, if you want extra flavor, go for the pop of garlic powder. It adds a lot to the flavor, without adding too much garlic "essence". This is quick, easy and really delicious! Especially with the surprise of the steak seasoning. I hope you like it!
