I recently spent the day with my friend Barbara King, and she whipped up this yummy dip for us!! I told her I just HAD to share it, it was so good! It’s a great thing to make when you’re just lounging on the back porch, or when you have guests over!
Ingredients:
8 oz cream cheese
1/2 cup red onion, finely chopped
1/2 cup green bell pepper, finely chopped
2 Tbsp granulated sugar
2 Tbsp vinegar
2 eggs, beaten
pinch of salt
2 Tbsp butter
Directions:
- Place sugar, vinegar, eggs, and salt in a small saucepan and cook over low heat until thickened, stirring constantly. Put aside to cool. Beat cream cheese, salt, and butter. Add egg mixture; beat until smooth. Add onion and bell pepper.
- Refrigerate one day before serving.
