We love mushrooms, yes we do…we love mushrooms, how ‘bout you? Chelsea & I have been obsessed with mushrooms. She made this recipe as an appetizer but honestly with the larger mushrooms, add a salad and there really are enough for a meal. She used canned crab meat but I am sure fresh would be even better (that is to much work for me) Enjoy!
Crab Stuffed Mushrooms
12-24 large button mushrooms
1 tablespoon butter
1 teaspoon minced garlic
8 oz. lump crab meat
5 oz. softened cream cheese
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup grated Parmesan
1/4 teaspoon hot sauce
1/2 cup seasoned bread crumbs
4 strips cooked bacon, chopped
Olive oil spray
Wipe mushrooms with a paper towel to clean. Remove stems. Chop the stems and salute with garlic in butter. Remove from heat let cool. Combine sautéed mushroom stems, cream cheese, chives, parsley, hot sauce, parmesan cheese, bacon, salt & pepper. Add crab to the mixture. Fill mushroom caps. Sprinkle breadcrumbs over the mushrooms spray with olive oil. Bake @ 350 for 25 minutes.
