What's Your Favorite Frozen Fruity Treat? Orange Sherbet? Peach Ice Cream?

How about that Banana Split Milk Shake, foodies!? Our culinary gals handed me another shake after the show and I did a happy dance the whole way home. I think this National Ice Cream month thing just might be the tastiest idea we’ve had yet.

And, I want everyone to be able to enjoy it. So, this Wednesday, we’re making a lactose- and sugar-free recipe for those of you with some dietary restrictions. (And, for those of you without restrictions, you’ll LOVE it!) Ready, set, let's make my Sugar-Free Coconut Raspberry Sorbet!

Sugar-Free Coconut Raspberry Sorbet

Sugar-Free Coconut Raspberry Sorbet

This recipe is prepared with Ninja Storm Designer Series 400 Watt 40-oz Food & Drink Maker (K39392).

Ingredients:

  • 1/2 cup canned light coconut milk, cold
  • 1/3 cup coconut water, cold
  • 3 Tbsp sugar substitute
  • 8 oz frozen raspberries
  • 1/4 cup unsweetened coconut flakes, toasted
  • 3 Tbsp (additional) unsweetened coconut flakes for garnish, toasted
  • Mint sprigs for garnish


Directions:

  1. Pour the coconut milk and coconut water into a small mixing bowl. Add the sugar substitute into the bowl and mix until the sugar is completely dissolved.
  2. Place the frozen raspberries and the coconut-sugar mixture into a food processing bowl. Sprinkle 1/4 cup of the toasted coconut into the bowl. Pulse 10 times and process for about 45–55 seconds, until smooth.
  3. To serve, scoop from the bowl and sprinkle the additional (3 Tbsp) coconut flakes and top with the mint sprigs.
