Hello Mommies!
It’s very nice to meet you! Let me start off by telling you a little bit about me. I have been with QVC for 6 years, I started out launching the new logo and the iQdoU campaign in 2007. Remember that??? Then, I was asked to start social media for QVC and let’s just say it’s hard to have a bad day when you love your job. On a personal note, I’m married to a producer who also works here at the Q (yes- we met here, yes- it’s allowed, yes- it happens quite a bit ;) and we were blessed with two wonderful children. We have a 2 year old son (who never stops talking) and a precious 7 month girl (who couldn’t be any sweeter.) I got engaged, moved, married and had two kids within the last 3 ½ years, so life has been a bit of a whirlwind! Hence the whole reason behind this blog! Consider me the working mom who is trying to juggle it all, be the best mom I can be, rediscover myself AND put healthy meals on the table. Whew! I don’t know about you, but this is really hard to master and I feel like if we share ideas and give each other a little cheer every now and again- we all can have a little less stress in our lives.
So, I’m going to get started by sharing what I’ve called “Veggie Fest.” It dawned on me that it’s already July and before we know it summer veggies are going to disappear. So get ready to fill up your baskets! If you don’t like veggies, I’m going to turn you into a believer and before you know it, you will have cravings! I’m going to kick off this week with my new all-time favorite:
Roasted Truffle Cauliflower (I cannot rave enough about these!)
5-6 cups of cauliflower florets cut about 1 inch in diameter
½ cup of extra virgin olive oil
1 tbsp of garlic
2 tbsp of lemon juice
1 tsp of salt
½ tsp of black pepper
2 tbsp of parmesan cheese
2 tbsp of truffle butter
Preheat the oven to 500 degrees F.
Place the cauliflower florets in a large saute pan or a roasting pan. Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, truffle butter and salt and pepper. Place the saute/roasting pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with the Parmesan cheese. Serve immediately while still warm. And repeat, because you are going to want more!
