The Wishful Dish is back after a week off, and we've got some great things lined up for you! Corky’s is bringing their Hickory Smoked Pork Tenderloin (a Customer Choice Award Nominee!), and it makes an awesome Friday Night Meal. Since The Wishful Dish is on Monday, you will receive any food item that is shipped frozen by Friday. I love to mix cold and hot foods together, especially during the summer. So, I thought I would share a salad recipe from my husband's Mom that she gave to me when I got married. It's colorful, crispy, and SO easy to make.
Angela's Layered Salad
1 Head of Lettuce - chopped
2 Green Onions - diced (just use the green stems)
8 oz. Colby Jack cheese - cubed
1 Box of Frozen Peas (slightly frozen)
1 Pound of bacon, crumbled
1 Small Head of Cauliflower, cut or broken into small pieces
1 Pint of mayonnaise thinned with buttermilk
In a large bowl, layer the ingredients in order, starting with the lettuce. Top with the mayo/buttermilk mixture. Refrigerate until ready to serve. The cool part here is that the salad can be prepared way ahead of time. Just make sure to toss it together just before serving, so the lettuce doesn't get soggy. Chilly, crispy, creamy, smokey, delicious!
