As I said on Wednesday, our next show is the first in our pre-produced series and this is where that “special” factor really shines through. Because it’s pre-recorded, I’ll be chatting with you IN PERSON! My blog today is supposed to focus on Wednesday’s new DIY Project. But, we have something special planned this week and need a few more days to pull everything together. So I didn’t think you’d mind seeing our next featured recipe today: Slow Cooker Chicken and Noodles.
This dish is a staple in our house…it’s so simple, so hearty, and so GOOD! My Facebook friends have asked for the recipe again and again over the years but before YHJ started, I didn’t have anything written down…I just dumped things in. But we figured out the measurements the best we could. And, here’s the recipe!
Slow Cooker Chicken and Noodles
Ingredients:
• 1 bag of wide egg noodles, cooked
• 1 lb carrots, thickly sliced
• 4 celery ribs, diced
• 1 yellow onion, diced
• 1 bay leaf
• Salt and pepper, to taste
• 6 boneless, skinless chicken breasts
• 2-3 cans (4-6 cups) chicken broth
Directions:
1. Place the carrots, celery, onion, and bay leaf in a slow cooker. Sprinkle with a little salt and pepper. Place the chicken breasts on top of the veggies and pour the broth on top. Cook for 8 hours on low.
2. When the time is up, remove the bay leaf and shred the chicken (inside the slow-cooker) with two forks. Serve spoonfuls over the cooked noodles.
Our family likes this recipe to be more about the noodles, shredded chicken, and vegetables, so I don't use much broth. If you like more broth, however, feel free to add some. And, if you have any leftovers, it’s good to add more broth so you can enjoy this as another meal the next day.
I can’t say enough about this recipe…it truly is a life saver for our family during busy fall nights when I’m at QVC all day, the kids are at sports practices, and we all just want a hearty meal at the end of a long day. It makes the whole kitchen smell so good! I know you have meals like that, right? What are they? What dish does your hungry family just love after a marathon day?
