Kat's Candy Cane Cookies

Happy Holidays, Foodie Friends! I hope you all are enjoying the “most wonderful time of the year!”  Like many of you, I absolutely LOVE Christmas! I wait all year to decorate the tree, listen to Christmas carols, find the perfect funny gift to bring to our annual White Elephant party, and spend quality time celebrating with family and friends. 

And of course, while enjoying the season’s cheer, I am also a big fan of enjoying all of the great foods that go along with it!  It’s my love of all flavors Christmas that actually inspired this recipe for Candy Cane Cookies.  They’re filled with sugar, spice, and everything nice that we all love this time of year!

Ingredients:

1 cup butter, melted

1 cup granulated sugar

1 egg

1 tsp vanilla

3 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

4-6 candy canes, finely crushed

48 candy cane kisses of miniature chocolate covered peppermint patties, unwrapped

Instructions:

1.)   Melt the butter in a small saucepan over medium-low heat, stirring frequently to prevent burning

2.)   Cream the melted butter with the sugar in a large bowl until they’re light and fluffy.  Follow by beating in the egg and vanilla.

3.)   Mix the flour, baking powder, and salt in another large bowl.  Gradually add the dry mixture to the creamed mixture until they’re fully incorporated and the dough is formed.

 

 

4.)   Place the unwrapped candy canes in a plastic Ziploc bag, remove the air from the bag, zip it closed, and crush candy canes using a kitchen mallet or a rolling pin.

5.) Shape dough into 1” balls and roll them each in the crushed candy canes.  Place each ball 2” apart from one another on an ungreased baking sheet. Heat oven to 350°F and bake for 10–12 minutes, or until cookies are golden brown on the bottom.

 

 

6.)   As soon as the cookies come out of oven, press the chocolate candy pieces into the center of each cookie. Remove the cookies from the pans and place on wire racks until cool.
