Mary Beth's Menu - Let It Snow, Let It Snow, Let It Snow ........ Cherries!

We've been hit three times by snow in just a little over one week and they are predicting a little more tomorrow morning. Each year at the first snowfall, I like to make Cherries in the Snow. It's a sweet treat and the red and white ingredients make me think of Christmas. Enjoy!

P.S. In my first cookbook it's on page 140 and is called, "Cherry-Berries Dessert", but I like to call it "Cherries in the Snow".

Cherries in the Snow

  • 6 Egg whites
  • 1/2 Teaspoon cream of tartar
  • 1/4 Teaspoon salt
  • 2 3/4 Cup sugar
  • 6 Ounce softened cream cheese
  • 1 Teaspoon vanilla
  • 2 Cups whipping cream
  • 2 Cups miniature marshmallows
  • 1 Can (21 oz.) cherry pie filling
  • 1 Teaspoon lemon juice
  • 2 Cups frozen strawberries (or sliced fresh fruit of your choice)

Heat oven to 275 degrees. Grease a 9" x 13" pan.

Beat egg whites, cream of tartar and salt until frothy.

Gradually beat in 1-3/4 sugar. Beat until stiff and glassy, about 15 minutes. I love my KitchenAid!

Spread in prepared pan.

Bake for 60 minutes. Turn off oven leaving meringue inside to cool overnight, about 12 hours.

Remove pan from oven after about 12 hours.

Mix together cream cheese, 1 cup of sugar and vanilla.

Gently fold in whipped cream and marshmallows.

Spread over meringue and refrigerate overnight for about 12 hours.

Cut into serving pieces and top with a mixture of the cherry pie filling, strawberries and lemon juice.

I wanted the dessert faster, so I added the fruit topping before allowing it to refrigerate for 12 hours. It's just another option and gives a little different consistency.
