Not even the Grinch himself could resist these adorable (and healthier) holiday Grinch Kabobs!
Now, let me be clear. I LOVE this time of year. The parties, the feasting, the cookie swaps…everything is all so unbelievably enticing and delicious.
But every gathering comes with some pretty tough choices. The Gingerbread Brownies or the Almond Bark? The Eggnog or my mom’s Overnight French Toast Casserole for Christmas morning? Decisions, decisions…what’s a famished foodie to do? And the toughest call of all…exactly how early do I need to set my alarm so I can get up and exercise to undo all the delicious damage I did?
This year, though, I have a secret weapon: A holiday party recipe that not only tastes scrumptious, but looks even cuter. Plus, it’s deceptively healthier, so no need for post-party guilt trips! AND it’s a hit with kids from one to 92. Because who doesn’t love THE GRINCH?
GRINCH KABOBS
Ingredients:
24 medium strawberries, greens cut off
24 whole green grapes
2 firm ripe bananas
2 Tbsps lemon juice
½ cup water
24 6-inch skewers
48 mini marshmallows
Yields: 24 kabobs
1. Peel and slice banana into ½-inch slices. Mix lemon juice and water and soak banana slices in lemon water for 5 minutes.
2. Starting with a grape, slide onto skewer long ways to one inch from bottom of skewer.
3. Add banana slice, then strawberry
4. Finish with two mini marshmallows, up to tip of skewer.
5. Arrange on Temp-tations 9 x 13 Lid-It.
6. Serve chilled (you can also fill a 9 x 13 baker with ice and place Lid-It with Grinch Kebobs on it).
Tip: A riper, firmer banana works best as it does not brown as fast as softer bananas.
