Mary Beth's Menu - Easter Fun with the Kids Edition

This is a cute project for the kids old enough to use a microwave. The end result can be eaten or used as decoration for your Easter table.

Easter Egg Nests

Ingredients:

6 oz. white almond bark

1-1/3 cup flaked coconut

1 Tablespoon milk

green food coloring

mini jelly beans / mini Robin's eggs candy

In a small mixing bowl, stir together the coconut, milk and a few drops of food coloring. Stir until evenly tinted to the shade of green you desire.

Place the almond bark in a microwavable bowl and melt. Watch closely and stir as necessary. It took about one minute and thirty seconds in my microwave. Stir melted chocolate thoroughly and add to the coconut mixture, stirring until completely blended.

Place a spoonful of the mixture onto wax paper and shape into nests. Fill with mini jelly beans and decorate as desired.

* I did not have almond bark on hand this time, so I used a combination of symphony bars from Hershey, one cookies and cream and one half of milk chocolate with almonds and toffee

* The "nests" can be made to any color you desire. If you would rather have brown nests, simply use all milk chocolate or blend food coloring to make brown
