Crunchy Green Pea Salad
- 10 oz. frozen peas
- 1 cup diced celery
- 1 cup cauliflower flowerettes
- 1 cup crisp-cooked, crumbled bacon
- 1 cup roasted cashews
- 1/2 cup sour cream
- 1/4 diced green onion (scallion)
- 1/4 cup sliced pimento
- 1 cup Hidden Valley Ranch Salad dressing OR 1 packet Hidden Valley Ranch Salad Dressing mix
- 1/2 teaspoon Dijon mustard
- 1 clove minced garlic (optional)
Place frozen peas in a colander and rinse with tepid water. Set aside.
In a small bowl stir together the sour cream, salad dressing, mustard and garlic, blending well.
Place the remaining ingredients in a large mixing bowl: celery, cauliflower, green onions, pimento, cashews, bacon and peas. Spoon salad mixture into large mixing bowl with veggies and stir gently. Transfer to a smaller bowl and serve or for best results, refrigerate overnight.
