Mary Beth's Menu - Crunchy Green Pea Salad

Crunchy Green Pea Salad

  • 10 oz. frozen peas
  • 1 cup diced celery
  • 1 cup cauliflower flowerettes
  • 1 cup crisp-cooked, crumbled bacon
  • 1 cup roasted cashews
  • 1/2 cup sour cream
  • 1/4 diced green onion (scallion)
  • 1/4 cup sliced pimento
  • 1 cup Hidden Valley Ranch Salad dressing OR 1 packet Hidden Valley Ranch Salad Dressing mix
  • 1/2 teaspoon Dijon mustard
  • 1 clove minced garlic (optional)
Place frozen peas in a colander and rinse with tepid water. Set aside.
In a small bowl stir together the sour cream, salad dressing, mustard and garlic, blending well. 
Place the remaining ingredients in a large mixing bowl: celery, cauliflower, green onions, pimento, cashews, bacon and peas. Spoon salad mixture into large mixing bowl with veggies and stir gently. Transfer to a smaller bowl and serve or for best results, refrigerate overnight.
