The Boy's Back-to-School Butterscotch/Chocolate Chip Cookies
Ingredients:
- 8 ounces room temperature butter, unsalted
- 1 cup sugar
- 1 cup light brown sugar
- 2 teaspoons vanilla
- 2 large eggs
- 3 cups all-purpose unbleached flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 8 ounces semi-sweet chocolate chips
- 8 ounces butterscotch chips
Directions:
- Preheat oven to 350 degrees
- Cream butter and sugar together in a mixer (We are a KitchenAid mixer family)
- Add eggs and vanilla and mix for 3 minutes
- In a separate bowl, combine flour, salt and baking soda
- Gradually mix in flour combination, but only mix until just combined (don't over mix!)
- Fold in both kinds of chips
- Roll into balls, about tablespoon-ish size and bake 10-12 minutes on a cookie sheet. They should be light in color with just a touch of brown starting on the edges, this way they will be nice and soft
- Transfer to a wire rack to cool
